Sliced meats and continental sausages in plastic packs and the same with sliced continental cheeses will work well with pumpernickel. It all lasts, tastes good and is low carb or low GI. You most likely don't need to worry about pumpernickel but check before you go. If you supplement the above with slices tomato, red onion, pickled chillis and red and green peppers, maybe some jars of olives too. Maybe a jar of pickled eggs and gherkins. If you like fish, tinned fish is excellent for camping. Get some fresh veg and fruit and you're ready for a banquet.
I also pre mix some ground spices, eg chilli and mustard or garlic and mustard and then an hour or so before a meal you can mix a little with some creme fraiche/sour cream/cottage cheese and then use it as a spread or to dollop on as a tasty dressing/sauce.
Cooked chicken is found in many outlets thesedays and many supermarkets sell them off half price later in the day. That's a good way of getting a hot meal without cooking and is again, minimal carbs. Plus, you can eat the left overs cold.
For a quick tasty salad, sliced olives with feta cheese cubes with diced tomatoes and sliced red onion on mixed leaves, rocket, watercress and spinach is my favourite. Add a very small amount of balsamic vinegar.
You can also cook some meats like pork chops before you go. They taste good cold and will be OK for the first day of your 3 day trip.
