Fried in oil mushrooms or raw

Hi might sound silly but I'm trying yet again to control my diabeties just wondering , I have had lots of mushrooms tonight for dinner possibly 300g which shrivel to nothing my blood has gone up to 7.9 from 5.6 is this because I fried them ,,,,,,what is the best way to eat button mushrooms raw? Ewwww

I always fry them in butter, much tastier than fried in oil.

Did you have anything else or did you just eat 300 gr of mushrooms for dinner?

Seems high to me, mushrooms are just over 3g for 100g, so only 10g of carbs for the meal.
Did you re test that 7.9 to check it?

Button mushrooms ar around 3% carbs, so your intake woud be around 9 g for that meal. Most fats and oils are zero carb. So low carb if that was all you ate.

Suggest that there was a slight misread on one of yout readings possibly due to contamination on the test site. Meter inaccuracy of 15% is also possible as a worst case 30% between two different readings, but is unlikely that both readings would be at opposite extremes.

In general, mushrooms are tastier if fried in butter or ghee. They are healthier raw since cooking destroys the vitamins, which in buttons would be Vit C, Vit D.

I love mushrooms, raw and cooked, but recently stopped eating them raw because my partner read that they could be dangerous raw. Now I'm googling and getting totally conflicting information.

Is there a good source for the information? (I would love to go back to snacking on raw mushrooms from the fridge).

For starters, how many decades have you eaten raw mushrooms without dying?
When was the last time you heard in the news of someone dying or getting dangerously ill from raw mushrooms (not counting people picking wild mushrooms without proper knowledge)?

if you ate no more carbs, you will need insulin for the fat and protein as your body will break it down into glucose.
This is why I avoid very low carb meals - insulin dosing is too complex as it varies in timing and ratio for different types of protein.

I think supermarkets would be in trouble if their produce was so toxic. I think the problems are generally associated with wild or scavenged mushrooms. certainly my experiments with fly Agaric mush required that they be cooked. some mush are sought for their mescalin content, and these too can be dodgy when raw.

I love raw mushrooms @EllieM Have been eating them like that since 1987 when given as part of a salad in a restaurant.

I'm the opposite - don't like them raw - love them cooked in butter or olive oil, and also put them in soups and casseroles.

Mushrooms are low in carb - I always allow about 3-4% by weight, so not very much for a standard portion, or added to a bolognese or stew. If you had 300g it would have been no more than 10 or 12g carbs.

Frying should not be a factor - I tend to fry mine in either olive oil or butter (no carbs there). Did you have mushrooms on their own? I think it's more likely your rise (which isn't that extreme) was caused by something other than mushrooms.

I also eat mushrooms uncooked in salads, always with olive oil, as they tend to be a bit dry otherwise.

Raw mushrooms with a salad makes sense. Vitamin D from the mushrooms combines with Vitamin K in the lettuce which is perfect pairing,
