I have been baking the Fergus loaves regularly. I do double the ingredients, mix using the dough hooks on my hand mixer, use a little more water, start it in a HOT oven and substitute about 50% of the wheat bran with oat bran for flavour. I add caraway seeds and sunflower seeds too . I "start " the yeast in water with about 1/2 a teaspoon of sugar. Overall, I've added a carb or two, but it's not very significant per slice. When I did the first couple of loaves, they were rather heavy. One of my exercise class is a retired chef and he sugested adding a little baking powder to lighten the bread and it works.
If you look at my bread, you wouldn't know there is any difference from a "Regular" wholemeal and it toasts deliciously. I have a silicon bread pan( bought for pennies at Aldi) which turns out perfectly.
