Getting better at bread

soaps on telly and people talking about the characters as if they were real.
I have been baking the Fergus loaves regularly. I do double the ingredients, mix using the dough hooks on my hand mixer, use a little more water, start it in a HOT oven and substitute about 50% of the wheat bran with oat bran for flavour. I add caraway seeds and sunflower seeds too . I "start " the yeast in water with about 1/2 a teaspoon of sugar. Overall, I've added a carb or two, but it's not very significant per slice. When I did the first couple of loaves, they were rather heavy. One of my exercise class is a retired chef and he sugested adding a little baking powder to lighten the bread and it works.
If you look at my bread, you wouldn't know there is any difference from a "Regular" wholemeal and it toasts deliciously. I have a silicon bread pan( bought for pennies at Aldi) which turns out perfectly.
 
Hanadr, I've been searching the threads for more info on the magic bread. My problem is that I am living in Thailand so I can't get the packaged stuff.
Are you allowed to give us the recipe or is it a secret?
Even typing Fergus bread in the search facility doesn't help!
Maybe you could pm it to me rather than publish it?

He sells the stuff to a lot of us and has a small business in Scotland.

Haven't you got any Brit pals who could get you some and ship it out to you - if that is allowed ?

Have you PM'd Fergus and asked if there is a way he can supply you ?

I have recently started using his bread mix, and can vouch for the fact it is very tasty, filling and very low in carbs. I am a very satisfied customer who will definitely be going back for more. (Fergus, get mixing !)

search the food threads, the recipe is there. Some of the ingredients are hard to find. Especially wheat Gluten. i get it on-line from the Low carb Megastore. It would probably be very expensive to ship it to Thailand

I have also searched and can not find any recipe ? Maybe Fergus has removed it for the reasons I gave ? If you know exactly where it is can you post the link to the Topic ?

BTW, your advice about baking soda was spot on - thank you. :D

As I thought it has been removed for Commercial reasons. So you will not see it posted here, hopefully. Don't want to affect Fergus' business, do we ??? :D

Sorry Katie! I did try to replace the gluten with other things, all to no avail.
Closest I got was Blue Circle cement but although it did produce a nice firm loaf, slicing it was a problem :lol:

Got a low carb beakfast cereal on the go now though, and no gluten in there!
