Help Understanding Blood Sugars?

So i keep getting strange readings. Can anyone help me understand.

I'm not diabetic, the highest reading i have got is 7.1.

Following meals i have been at 3.8 post 1 hour after normally 3 hours + or in the fasting morning reading.

The meal i just ate was
90g Steel Cut Oats w 15g Chia Seed
2 Dried Apricots
Followed by 80g Beans
Followed by 1/2 Avocado

1 Hour: 5.6
2 Hour 5.4
3 Hour 5.4
3:20 4.9
4 Hour 5.2

My Diet is 70% Carb 15% Fat & Protien.
Isn't it supposed to return to my normal fasting 4.4 after 2 hours?

There's nothing strange about those readings. They are perfectly normal.

Why are you testing?
 
I was waking up in the middle of the night and one night i was shaking and my heart was racing.
A paramedic came out and my Blood Sugar was 2.4.

So i bought a meter. Aren't Blood sugars meant to come down after 2 hours i dont understand why they stay the same for four hours,

Other days they will go down at the 2 hour mark then a hour after back up, i cant find out if that is supposed to be?

Or why they lessen below 4 for instance in middle of night or morning.

I had been doing Intermittent fasting so eating within a 8 Hour window 500 Carb but i stopped since being hypo, don't know what caused it as i still at times get 3.8.

I agree that those readings are all 'normal' and I wouldn't worry. If you were to dip below 4 very often after meals it might imply one of the diabetic conditions but at this stage I wouldn't worry - perhaps do an occasional test 2 hours after a meal to re-assure you.
 
a lot of your carbs are slow acting. eating 70% carbs is a high % The 2010 Dietary Guidelines for Americans recommends eating within the following ranges: Carbohydrates: 45-65% of calories. Fat: 20-35% of calories. Thank you, as i understand fat plus carb is the worst combination as the fat cells block the muscle cells from accepting sugar and it builds in the blood.

(This is only what i choose and i am not diabetic, although diabetes has been claimed to be reversed on this type of diet i most definatley wouldn't follow unless speaking to a doctor.)

That is why i would either eat high or low carb, being vegan and following the okinawans, one of the longest living populations. 85% Carb 9% Protien 6% Fat.
They had some of the lowest rates of cancer, diabetes etc.
From all science i have seen is to keep fat low as then you wont have fat in your cells which block glucose from entering muscle and being used up.

I do think you should talk to your doctor. Your post-prandial BS levels are good, but the middle of the night dip to 2.4 was unusual and hypoglycemic.
I'm not sure about your interpretation of fat's influence on the body's ability to absorb glucose though. Fat has been rather demonised in the past but most recent research tends to suggest it is beneficial.
You cited the Okinamans, but you might also like to have a look at the Massai who have a high fat diet and also the Inuit, these peoples are remarkably healthy compared with most in the more developed countries.

If you eat that many carbs a day, expect to have symptoms of hypos! As you’re not diabetic, your liver will dump a load of glucose in your system to raise it again.

The diet you describe isn’t entirely accurate, they don’t eat much rice or grain and their carbs come from a purple sweet potato. They also eat small amounts of fish and quite a bit of pork. Their lifestyle and genetics (among other things) will also have a massive impact on their health and longevity.
 
most primitive ie un factory cultures food is going to be better than our junk food cultures. whether its plant based or animal based. the loading is relative stable so the body can cope with it. our food chucks big spikes of fast acting glucose that makes the body struggle to cope with it.
