There are 5 main factors that effect post meal blood sugar levels.
1. The volume of CARBs
2. The GI/GL level of the foods
3. The presence of FAT in the meal
4. The presence of Protein in the meal
5. The presence of Fibre in the meal
That's probably why the coconut oil has affected your blood sugar level. Its useful to consider all of these factors when preparing any meals or snacks. I like to make sure I have protein with every meal as that also helps control satiety (feeling hungry) or fullness.

I use it in salads, baking oil based cakes. My cholesterol is 3.5 and the diabetic clinic want it at 3. I said not in this lifetime.I have porridge for breakfast every morning and I put a heaped teaspoon of coconut oil in it In the bottom of the bowl so it isn't floating on top. This stops the porridge spiking me. I also fry with it eggs and sweet potato chips. I roast with it too. My bad cholesterol has gone down good cholesterol has gone up. I suffer very dry sking so use it externally as well.
I'm on very powerful opiates so also eat a spoonful a day just as it is and this stops me ever getting constipated. Better than the prescribed stuff and the doc actually agrees with me for once.
I've started using MCT oil in my coffee these last few days - keeps me from hunger until way past lunchtime.
I like to bake salmon in foil, rubbed over very generously with coconut oil. Then I throw in whatever veggies I have too - tomatoes, leeks, courgette, mushrooms, peppers, whatever is in the fridge - it comes out really nice with the coconut and the veggie juices. I have a small baked potato with it for the carbs. I also make omelette using coconut oil as the base and it's nice to have that coconut flavour in the background. I generally make a cheese and tomato omelette, with onion in the coconut oil to start it offI have been reading that coconut oil is very good for people with diabetes but how can I use it?

Remember many diabetics control their disease by diet alone so yes there are good foods and bad foods in this. I have one Metformin a day sometimes two more often than not none so I'm more or less diet controlled.Wow I'm really surprised by this! I never really believe in foods that can help diabetes but I might give this a go! Quick question- I see people using this for cooking, isn't coconut oil sweet?
Sounds interesting, I'll have to give it ago, but my husband's got the freezer so stuffed full of unlabelled packages of god knows what that I'll be hard pushed to find room for a baking tray!its lovely melted with a little square of dark chocolate and almond butter plus a few crushed almonds .. melt in a microwave or sauce pan and then spread out very thinly onto a baking sheet, sprinkle with thinly with sea salt ..then pop in the freezer .... break up into shards when frozen .. its yummy
