How can I use coconut oil

There are 5 main factors that effect post meal blood sugar levels.
1. The volume of CARBs
2. The GI/GL level of the foods
3. The presence of FAT in the meal
4. The presence of Protein in the meal
5. The presence of Fibre in the meal
That's probably why the coconut oil has affected your blood sugar level. Its useful to consider all of these factors when preparing any meals or snacks. I like to make sure I have protein with every meal as that also helps control satiety (feeling hungry) or fullness.

Its the speed that ricekrispies make me go up... Got it all timed beautifully today with my teaspoon coconut oil..
9.03 5.9 waking bolus.
9.29. 6.2. Rice krispie bolus
10.00 ate
11.00. 6.4
11.52. Dropped to 4.3.

So almost an hour delayfrom 1st waking bolus to then my eating bolys and then an hour and actually ate..

Before I could have gone to 11.0 on bg...and then without a correction sunk to 3.9....

Got to have low fibre breakfast and rice crispies was recommended for my slow working stomach and bowel..

Has taken a time to stop the high's -now just got to stop the low!!!

All this fuss over a 30g bowl of rice crispies.... Thankfully my hubby appreciates the hassle that is involved but other non diabetics just would not appreciate the faffing around just a bowl of cereal!!

I have to force myself to eat....slow colonic transit means that I never feel hungry and I have to be very, very careful with the actual foods I do eat...

Hunger and satiety is never thought of... I literally feel as if I am force feeding myself. As for 30+ years I have only ate breakfast for one period of 6 months... Again when being advised to... But this time the advice is actually good and helping me so I can see a positive with my stomach... Just initially a trial and error with the bloods!!-lol....
 
Coconut oil is fantastic as it is supposed to be more efficiently digested therefore less likely to hand around, Really good for stir frying veg or cooking potatoes I have an air fryer and cook potatoes in coconut oil then add spices - lovely.

I also as above use it in creams mixed with other oils and in a hair balm. You can also whip it on its own and add essential oil like rose to make a lovely body lotion. I have quite sensitive skin and making my own creams has been fantastic there are a few people that ask me for it now.
 
I have porridge for breakfast every morning and I put a heaped teaspoon of coconut oil in it In the bottom of the bowl so it isn't floating on top. This stops the porridge spiking me. I also fry with it eggs and sweet potato chips. I roast with it too. My bad cholesterol has gone down good cholesterol has gone up. I suffer very dry sking so use it externally as well.
I'm on very powerful opiates so also eat a spoonful a day just as it is and this stops me ever getting constipated. Better than the prescribed stuff and the doc actually agrees with me for once.
I use it in salads, baking oil based cakes. My cholesterol is 3.5 and the diabetic clinic want it at 3. I said not in this lifetime.
I've started using MCT oil in my coffee these last few days - keeps me from hunger until way past lunchtime.
 
Interesting and new to me. I have not come across coconut oil as a recommended item, but coconut WAT£R has been a different thing. Could I suggest that people interested in the benefits research both items on the net?

I have been reading that coconut oil is very good for people with diabetes but how can I use it?

I like to bake salmon in foil, rubbed over very generously with coconut oil. Then I throw in whatever veggies I have too - tomatoes, leeks, courgette, mushrooms, peppers, whatever is in the fridge - it comes out really nice with the coconut and the veggie juices. I have a small baked potato with it for the carbs. I also make omelette using coconut oil as the base and it's nice to have that coconut flavour in the background. I generally make a cheese and tomato omelette, with onion in the coconut oil to start it off :)

Wow I'm really surprised by this! I never really believe in foods that can help diabetes but I might give this a go! Quick question- I see people using this for cooking, isn't coconut oil sweet?
Remember many diabetics control their disease by diet alone so yes there are good foods and bad foods in this. I have one Metformin a day sometimes two more often than not none so I'm more or less diet controlled.
 
Made some fat bombs today with coconut oil, cocoa, sweetener and orange essence. Had a little piece when it set and put the rest in the bin. I like fresh coconut but didn't like the coconut oil. Never mind, does anyone want a jar of organic coconut oil.
 
I fry stuff in it and it comes out really well, better than the olive oil I was using. Have seen recipes for cookies made with coconut flour and coconut oil, so will have a go at that at some point. When I was a student we all used to rub it on to sunbathe. No consideration of sun damage to the skin in those days!
 
its lovely melted with a little square of dark chocolate and almond butter plus a few crushed almonds .. melt in a microwave or sauce pan and then spread out very thinly onto a baking sheet, sprinkle with thinly with sea salt ..then pop in the freezer .... break up into shards when frozen .. its yummy

Sounds interesting, I'll have to give it ago, but my husband's got the freezer so stuffed full of unlabelled packages of god knows what that I'll be hard pushed to find room for a baking tray!

@carol43: I usually make my fat bombs with a base mixture of coconut oil, coconut butter and a bit of cream, and these fortunately harden up nicely in the fridge. I don't care too much for coconut oil but I love coconut butter though it's very expensive.

Just any flat tray will do .. if you line the tray with cling film then you can lift of the tray and flip off the clingfilm keeping the shards biggish .. its so good when really thin and frozen, the wife likes hers with chopped berries in as well like rasps and strawberries .. but it make it too cold for me with them added.
