I make home made yoghurt - I do a plain one and find that if I culture it for 12 or more hours not only is it thicker but also had way less impact on my bgs as the good bacteria eats the lactose. Chilled hm yoghurt just with a few berries is a wonderful pudding. Plus if no fresh berries or a hot day you can just put a spoon of frozen berries into your portion of yoghurt and stir to make instant diabetic friendly ice cream yoghurt. Thanks for the reply, That sounds a nice pudding will give that a go, Im hoping the meter when it arrives I can make food I can eat. Im determined to find a way to make my individual apple pies that won't increase my levels. Yogurt is Okay I think as I do make my own, so thats another avenue to go down.
Lots to learn thanks again for your input![]()
I never found a pastry alternative I liked, but you could try using a crumble version, or perhaps make a 'cheesecake' type of dessert, with ground almond base and gelatine set apple filling. Thanks for the reply, That sounds a nice pudding will give that a go, Im hoping the meter when it arrives I can make food I can eat. Thanks a lot but its a daunting task I think.Oh yummy at the scone and cake making! I believe you'll be ok in the long run as long as you can lower your carb intake. Not too much just enough to get out of the pre-diabetic range.
I love this forum for support and all the best though I'm convinced you'll beat this!
You can add mixed seeds such as a few chia seeds and leave in your portions yoghurt overnight as they thicken and give it texture. Peel that you make yourself can be low carb I often zest a lemon or lime and use as a flavouring. That sounds delicious
I make yoghurt regularly and used to use 250ml jars so got 4 desert's from a litre. It had a layer of muesli then yoghurt then fruit (frozen sherrys) more yoghurt then topped with italian mixed peel, but not any more
So I need to come up with a muesli alternative and a new topping, I hope lol
I will check out tesco for seeds thanks, I do eat a lot of oranges so perhaps I can find a recipe to use that peel. You can add mixed seeds such as a few chia seeds and leave in your portions yoghurt overnight as they thicken and give it texture.
