What is it? I read posts where people are talking about eating it but not what it is. I looked for some at my grocery store but since I don't know what it is I didn't know where to look. I tried the baking ingredients aisle and the vitamins/supplements aisle but didn't see it.

Is it safe? Is it healthful?

I haven't used it myself, but there have be number of threads on here in the past. You could do a quick search. If that doesn't work, Dr Google could likely help.

As I said, I've looked here and learned nothing. I've also Googled it and found nothing helpful. Which is why I posted this thread. :)

I just used the search above for "inulin blood sugar and two pages were return. I just chose these two from the lists, as they are threads, rather than posts.:

https://www.diabetes.co.uk/forum/threads/inulin-food-supplements.99565/#post-1125474

A Google search, using the same "inulin blood glucose" returned the following: https://www.google.co.uk/search?q=inulin+blood+glucose&ie=UTF-8&oe=UTF-8&hl=en-gb&client=safari

I hope you find something there to help.

Not a very helpful form of fibre if you have a fructans (viz FODMAPS diet) sensitivity like me. Very unpleasant side effects :meh:
