What have you eaten today? (Low carb forum)

Nice easy recipe for quick keto carrot here, made with almond flour which will be better than wholemeal flour

Quick question - can you freeze cream cheese? I don't eat it normally, and it feels like a waste to get a tub and only use a little bit. I'd really like to try the carrot cake recipe, so figured if I like it I could make/freeze a batch of topping for future use..

Yes you can but it will alter it a bit, so the texture changes, will be fine for making more frosting or in sauces or stirring through veggies etc but probably not the best for spreading in anything, the texture goes a bit grainy, given it a little beat with a wooden spoon may help with it, if your going to use it just for frosting then it would probably be better to make a big batch of frosting with it and freeze it in portions - I’ve frozen frosting and it seems to stay more stable
 
Breakfast kefir then poached eggs on low carb toast
Second day of PHC online conference today so roasted a chicken mid morning to eat cold later.
Lunch cheese, celery and low carb crackers followed by a couple of strawberries with yoghurt
Dinner cold roast chicken and sausage served with salads

Followed by hm LC chocolate brownie and cup of decaffeinated coffee.
@IanBish sorry to hear your coffee and walnut cake didn't work as expected. Low carb baking can seem more like a chemistry experiment compared to normal baking and as @MrsA2 says sweeteners are often the main problem. Sweeteners like erythritol work well as they are used in same weight as the sugars in baking which helps but some people prefer the taste of sweeteners that mix Stevia with erythritol as tastes sweeter but can be used as sugar 're weight ( like granulated Truvia). Good luck with your carrot cake - not one I've ever tried.
 
Morning all. Pensioners lunch today so no idea what we will get. After that, it's Forget-me-Not club which is basically as many cakes or sandwiches you can eat and tea and coffee. And that's straight after lunch, from 2 till 4! I mostly have one cake or sausage roll but will try to keep away from them. It's a sort of meeting place once a month - thank goodness it's not every week!
 
This morning I had 2 of the small but excellent SRSLY croissants , split filled with cheese and popped in the airfryer for a minute. Only 1 g Carb each, they are a real treat.
Lunch was seafood salad, poached salmon, prawns and marinated anchovies.
Dinner was smoked haddock in a herby, mushroomy, creamy, cheesy sauce. Raspberries and clotted cream to follow

yesterdays pensioners lunch was, melon starter, baked chicken with mashed potatoes, broccoli, carrots and gravy, jam sponge and custard for pudding. Forget- me- not club, I had 2 small sandwiches and 1 cake. today my level was 9.1. understandable. Today I am in a rebellious mood and have already had a sausage roll and 2 pieces of plum loaf with oodles of butter. i deserve a kick where the sun don't shine!
 
Been away in Liverpool for a few days
Yesterday took two boiled eggs with me for journey
Dinner well researched and booked ahead to Bacaro Liverpool an Italian tapas place. It was excellent. We started with a large sharing charcuterie board ( no photo) and some Olives then I had two small plate \ tapas dishes - pan fried Sea bass on courgettes and smashed peas

Then Beef Carpaccio which was served with Harrisa mayo and decorated with parmesan and a few edible flowers

Both dishes were exceptional. We then shared a cheese board with celery. Would recommend the restaurant - very relaxed and high quality food and reasonable price too.
This morning we went to a recommended coffee shop which does breakfast opposite Lime Street Station called Key Lime Coffee and had an exceptional coffee and a freshly cooked ( what they called small!) Omelette with bacon, mushrooms and cheese

It was excellent and I've not needed more food yet today! Think my omelette must have been three or four eggs and loads of fillings. Planning salads with left over roast chicken for tea tonight at home.
