Yes, it could be a liver dump. I experience something similar when my BG gets down into the 3s - food (even zero carb meals of just meat/fish) raises my post prandial readings by more than usual.
You mention that the 4.6 is your lowest ever reading. Did you re-test to confirm either that or the reading of 7? One of them may have been off.
To be honest though, I wouldn’t worry too much about one odd BG rise - just look into it if a pattern develops.

I like to tell people that have raised blood sugars for no reason to keep an eye out for being a misdiagnosed type 1. Salads used to raise my blood sugars to over 13 at one point. So whenever I hear someone say a salad raised their blood sugar I like to make sure they are aware of how many of us are misdiagnosed at first.
When you first start to develop type 1 you are in a honeymoon phase where you still make insulin until you don't and it usually takes years to fully develop. So you will have erratic ups and downs and you will slowly get worse. Medications and change in diet might work for a while and then it won't, you have to end up having insulin for even cucumbers and tomatoes,. So just keep,it in mind if it is something that continues.

I just started using apple cider vinegar this week! Good stuff, love the taste, and low carb. The lack of fats might be the answer here (maybe add half an avocado or something next time?), but a liver dump seems more and more likely... I think. If it was the cherry toms or radishes I do think you would've had to have eaten more of those for such a rise... Could be it was just the one time. Thanks Jim, I think I agree with you, bit tasteless as well particularly chicken breast.I never found chicken too helpful. Too much lean protein and not enough fat.

Really enjoyed the taste of the ACV. #
Will consider the lack of fats as well as the liver dump as a possible cause. Didn't realise that lack of fats could be a contributing factor, hadn't heard of this before. Whilst we are on the subject of fats, is duck fat ok to use, I have about three jars in the cupboard doing nothing cos roasties are now off the menu.
