Longing for Latte?

I have mentioned before that my two particular carb kryptonites are milk and bread. I have really missed my weekend lattes and toast with peanut butter. Unfortunately, the bread I cannot reconcile, but the coffee.... I’ve cracked it!

Now this might come under the category of the amazingly obvious, but it’s taken me 6 months for the penny to drop, so perhaps it will help someone! I love espresso and espresso based milk coffees, but not, unfortunately, espresso diluted with hot water, black or with cream. So I have been reluctantly drinking filter coffee with cream and it’s ok, even quite nice sometimes, but not as tasty as espresso-based coffee.

So, today I diluted the double cream with water to the volume I would normally use for milk, steamed that, and made my latte. And it totally works! It even goes suitably micro-foamy. If I was into latte art I reckon I could have achieved something with the resultant froth. And most importantly it tasted delicious and does not shift my BG at all. I am so chuffed. I can now resume use of my relatively new coffee machine and fancy grinder which have been repining unloved and unused since Xmas.

Definitely agree with you -- it would be hard to give up espresso-based drinks. I use decaffeinated espresso (as caffeine raises my blood sugars -- seems unproblematic for most though) with frothed double cream. Would gather this is pretty much the same thing, just less water.
 
Having never bought coffee as a drink I am not sure what you are after, but I make coffee in a filter machine then drink it with extra thick cream which I whizz up to a froth with my Bamix device. I do like my kitchen toys.
 
I’ve been making espresso with full coconut cream. Maybe an acquired taste...
