Low Carb Ice Cream?

Saw a mention of LC ice cream on here somewhere - is there such a thing and where can I find the recipe? Hubby loves ice cream and is trying so hard with his diet, I'd like to make him some as a treat.

I make this one
Sometimes I leave out the raspberries.
I freeze it in small portions, like kids ice lolly moulds as its quite rich

During the hot summer there was quite a lot of discussion and plugs for Oppo ice cream which is an option if hubby can’t wait for the ice cream maker.
I think it maybe an acquired taste. One I never acquired but many on this forum have done.

If you have a food processor or blender you can make instant ice cream from Greek yoghurt and frozen berries, cream and artificial sweetener are optional extras...

During the hot summer there was quite a lot of discussion and plugs for Oppo ice cream which is an option if hubby can’t wait for the ice cream maker.
I think it maybe an acquired taste. One I never acquired but many on this forum have done.

I used to be a fan of Oppo ice creams when they first came out, but they've changed the original recipes and I've not bought any for several years now.

Ice cream was originally eggs and cream, plus sugar colouring and flavouring or fruit puree as liked.
I make a custard of eggs and cream and add whatever is to hand once it is becoming frozen. I have an icecream maker so it is easy.
I don't need much sweetness these days - in the really hot days I used peas one, and pureed beetroot a couple of times. I added some salt to the peas and it tasted like peanuts - a possible reason for that occurred to me at the time having never dawned on me before.

Thanks I just made some using coconut milk yoghurt mixed frozen berries and I little sugar free maple syrup.. it tastes like maple syrup but it’s not.

Yeah, to make low carb ice cream virtually indistnguishable from store bought - an ice cream maker is the thing - as a mini churner and freezer.

Choose your own milk substitute to mix with the cream, and your fave sugar-substitutes. I have found that crystals seem to be part of the making ice cream like ice cream thing - so I have a favourite brand of stevia crystals, and I don't need to use but a dessert spoon of it per batch of ice cream. My LC ice creams are not particularly sweet. As for the flavours - the LC world is yours to choose from. Fruit, fakely sweetened sweets and marshmallows chocolate and licorice for example. Chocolate, vanilla, strawberry are the staples of the ice cream world. If you want a store bought look you will probably want to do natural colours, and flavours from the supermarket in the little bottles. As well as stevia sweetened chocolate chips for your standard chocolate chip ice creams.

The key to lovely creamy ice cream is the anglaise sauce - the milk and cream, with the egg yolks added brought to the right simmer point.

Where I am currently, the gym is selling sugar-free keto Mr Whippy style ice cream. Whilst I don’t have a sweet tooth, in the heat, several have passed my tonsils.

a few days ago, it was Durian flavour. Don’t see much of that in UK.

Yes, I'm actually appalled when I see some of the ingredients that go into the commercial "ice cream" now.

I use to have a mini ice cream maker many years ago that did the preparations then its bowl sat in the freezer to be finished off - but it went walk about when husband took over cooking etc. More recently I did get one that did all the freezing too, but my niece gave it a loving home after I - unfortunately in retrospect!- discovered Oppo...

Ice cream is my weakness and always has been, so i naturally gravitated straight to this post when I saw the subject line.

I never even thought about making my own ice cream before, so glad I headed over this way, thank you for the original post and to those who have given us all some valuable information.

I made this and I love it!

200 milk
100 cream
75 chocolate (85 or 90% cocoa)
75 almond paste
3 egg yolks
walnuts
amaretto (optional, just a drop for flavour)

Toast walnuts.
Heat milk, cream, chocolate, almond paste.
Beat egg yolks.
Slowly and stirring pour the chocolate mixture into the egg.
Return to the pan and stir until it thickens enough to stop running off the spoon.
Cool and add amaretto.
Put in the ice cream maker.
Add the broken walnuts halfway through.

Yes, one of the best financial decisions I ever made was investing in an ice cream maker, post diagnosis :happy: It was indeed a big cost, but made up for when I recreate some of my favourite (nz) ice creams, and yeah, get to eat them with very little change in my blood glucose.

And the ice creams, unlike my low-carb breads, muffins and cakes, are eaten by those without diabetes without complaint! Even being less sweet, and being sweetened as they are with stevia (which folks seems to have a 'yae or nae' feeling about - mostly nae amongst my friends and family). Not sure why. Possibly I put up a big successful pretense with ice cream! As in camoflage. Or its the natural delight of churned and frozen cream - I tend to think it is the latter.

I made ice cream using protein powder and hazelnut ‘milk’. It was as solid as a rock but tasted good once I let it melt. Which means it wasn’t ice cream anymore, I guess ;(

Edited to add: although as ice cream it was a complete failure I still make it — tastes similar to nutella

I made a lime chocolate chip ice cream for Easter. Went down a treat.

Real lime juice, natural green colour, stevia crystals, coconut milk from nearbyish islands, lovely nz cream from all the moo cows out there, stevia sweetened chocolate chips - which are a staple in my pantry and fridge.

Yum.
