Low carb meal plan

Would love to see some low carb meal plans outlining what to eat for breakfast, lunch and dinner. Actual items to eat at these meals laid out. Thank you

Hi,
It isn't rocket science. As said above www.dietdoctor.com has some meal plans in addition to lots of information about which foods are lower carb. There are also threads in the Low Carb sub-forum here at Diabetes.co.uk

Personally I usually have 2 hard boiled eggs (with LoSalt , black popper and a drizzle of Olive Oil) for breakfast almost every day - carbs are less than 1gm for 2 large eggs. Any way you do eggs is fine ( except that scrambled is a little higher in carbs because of the milk). Alternatively I might have 2 or 3 rashers of bacon fired plus a fried large egg. Or smoked herring (kipper).

For Lunch I often have a cheese salad with lettuce, cucumber, radishes, celery, dressed with Olive Oil, Vinegar, LoSalt and black pepper. If you can tolerate Tomatoes you can add 1 or 2 of those, alternatively Avocado is a very good low carb item.
Instead of cheese, I may have salmon (either cooked or smoked) with the salad.

For dinner one of my favourites is a lamb steak (fried or grilled) with stir fired broccoli and/or courgette.

Just avoid/minimise portions of bread, pasta, (flour) noodles, fruits (except berries), and below ground vegetables such as potatoes, beetroot, turnip, swede, sweet potatoes and (unless you can tolerate them) carrots.

But for best control it is good to use a Blood Glucose meter so you can see which food items spike your Blood Glucose and so should be avoided.
We all metabolise crabs slightly differently and some like me have to be very strict, where others can be more relaxed about carbs. - If you don't test, then you don't know!

Eating low carb is very simple for me - I only need to eat twice a day as it is so sustaining.
For breakfast I might have smoked fish, with cauliflower or a slice of low carb bread, or steak and mushrooms, or sausages, scrambled eggs with cheese and a sliced tomato on top, a chop with courgette and sweet pepper, and a mug of coffee with cream.
For dinner - any meat or fish, or seafood, and a huge salad or stirfry of low carb veges. A couple of times a wek a small serving of frozen berries with cream, sometimes with sugar free jelly - or I make a jelly and add yoghurt when it is cool, then whisk it so it sets frothy. Another mug of coffee with cream and I'm fine.

Ah - there could be something a bit more fundamental to my way of cooking/eating than I thought - I have never added milk to scrambled eggs, I use butter or olive oil in an ordinary pan, just to line it, and with my little wok shaped but on a handle pan, which is coated in something slick, I just drop in the eggs and stir.
Similarly I would never have eaten cauliflower cheese if it was done in flour and milk.

The full recipe is - using my little wok shaped pan - scramble three eggs. When the eggs are still just a little damp, grate on red Leicester cheese, mix in lightly, then drop a thinly sliced tomato on top and place a plate over the top of the pan. Carry to where you will eat, collecting a fork on the way. Remove the plate, tip the contents onto the plate and dig in.

Here's one of my days' menu:

Breakfast: scrambled eggs with grated cheese, coffee

Lunch; 1 cup chicken salad (with celery and onions), 1/4 cup frozen blueberries strewn on top of the salad,
topped with 1/2 medium avocado - cubed, and about 4-5 baby tomatoes, coffee

Supper: Roast chicken, green salad (with baby tomatoes, red peppers and marinated artochokes)
coffee (which I usually have with a tablespoon of peanut butter on the side)
