Low carb muffins maybe?

Hi guys, does anyone have/know a low carb muffin recipe or something I can make which won't send me into overdrive I want a treat but something that's low as well. I've made oaty cakes from my diabetic food book I received when diagnosed but I want something different.

Hello . The website diabeticgoodbaking.com has a super recipe for blueberry muffins using almond flour and the ricotta cake recipe is delicious.

This is the basic recipe I use. You can then add whatever you fancy - ginger, cocoa, lemon, high % chocolate chips, blueberries. I also leave out the sweet ingredients to make savoury ones - cheese, jalapenos, sun dried tomatoes, garlic powder or whatever. Good for lunches or buffets.

Hi

if you look on the low carb forum there are recipes there (or links to) purplekat listed a lot together, scroll down and all the desserts are grouped together over a few posts as there are so many of them click on the names and they go to the recipe in the low carb section. I often alter the recipes to suit myself ( i am not keen on adding any sugars or sweeteners) I love the Stracciatella cake but I don't add the sweetener, I find the almonds add enough sweetness.
