Low Carb Xmassy Deliciousness

Last year I didn't bother with much - just a good steak on Xmas Day, and a case of food poisoning at a Family Party cos I had a single carby samosa. Hey ho.
But this year, I'm planning a bit more decadence. Still low carb. Probably keto.

These are a few recipes I am considering (hopefully with pics, if I can get them to work), just so I can enjoy the decadent gluttony:

Edited to add: had these for breakfast on Xmas Day. Delicious. The cream cheese and the spinach were what made the meal special. Definitely going to have again!

(replacing the sugar with erythritol, but I am very curious to see what pomegranate molasses tastes like...)
Edited to add: Ooooh, this was delicious! I ended up not using the orange zest, just a bit of extra OJ, because I am not a fan of marmalade like flavours, and I kept tweaking the molasses and the erythritol upwards to a sweetness that Mr B would like. We both though it was so nice that I am making extra, and freezing it in pots for use through the year. 10 mins from start to finish!

Finally got around to making this on New Years Day. Subbed an organic chicken stock cube + cream for the tin of chicken soup. Boy was it delicious. And quick. And sooo simple. This is going to be a regular, now that I have finally admitted to myself that broccoli is only enjoyable if it has been tarted up with something cheesy, or spicy, or creamy.

Edited to add: what is not to love? good hot or cold, they freeze, chill, fit in lunch boxes, and can be finger food when walking out to the car, when you are running late for work... Delish.

Edited to add: Delicious, although I mucked about with the recipe a bit, dropping the balsamic, and adding in St Augur cheese, because there was some in the fridge that needed finishing. Oh, and we used baby spinach and watercress, frather than lettuce. I think it would be great with shredded iceberg too.

Some lovely ideas here. We were debating cranberries with our Christmas duck today.

Pear and walnut salad? With watercress? Very tempted. And so is the duck... ;)
 
Pleased you seem to be finding yummly a decent read, @Brunneria . It has become my current variant of food porn, once I learned how to add both my requirements and preferences.

Actually, the more I think about making LC keto mince pies, the more I cringe at the thought of the hassle.
I am SUCH a lazy cook.

So I looked at bought mincemeat and the carbs are 15g/tablespoon - which is pretty horrific, but it is LESS horrific that actually having to make pastry and mincemeat.
Yup, I am that lazy.

Plus of course that I probably won't want to eat more than a couple of them all Xmas, and nobody else will want to eat LC mincepies when there are our local butcher's crumble topping mince pies (45g carbs ea) around. They are divine. And Mr B was torturing me yesterday by opening a pack and eating them in front of me.

There is only so much self control a girl can generate.

So I had a brainwave.

I will make one of these

It will sink during cooking, so if I turn the cooked mug cake out, it will (like an upsidedown cake) have molten mincemeat dribbling down over the vanilla cake.

Oh NOOOOO - @Brunneria - I had my Christmas menu all planned until I read this thread. :banghead::banghead:

There are several there I'm going to have to make.
 
Some lovely ideas here. We were debating cranberries with our Christmas duck today.
Slow braised red cabbage with cranberries and Christmas spices goes very well with duck - even talking ones!
 
Very fond of braised red cabbage - I may well go for that, as well as the garlicky sprouts!
 
If you keep posting all these mouth watering recipes, I am going to have to give up work! There is only so many hours in a weekend. Maybe I can call in sick, possibly keto flu if I am lucky
