Hi, I'm not sure if my original post worked or not, but I can't find it. Sorry if this is a repeat.
My partner has type 2 and a physical job alongside a huge appetite.
My problem is trying to find filling alternatives to his previous lunch box of 8 rounds of white bread sandwiches.
All suggestions are welcome.

Carbs and the insulin released to deal with them tends to make people hungry, so the change in diet might alter things.
Usually substituting protein and fat to ensure that there is adequate nutrition when carbs are reduced helps to reduce appetite, and there is always the option of making a lower carb bread if you are into home baking.
I can only see one message from you, by the way.
Is your husband's HbA1c not far from the start of the range? If so the changes required to fall back below 48 might not be all that severe - stacking the filling between fewer slices of bread, for instance.

I remember those days!
Days like 50 years ago that is.
Try giving him boiled eggs fried spicy chicken a few sausages a chop some recooked rice.
Tinned fish... he'll be surprised how much he likes it I think.
Nuts berries.
If he has a huge appetite give him lots of it.

I'll echo the advise for protein and lots of it. Add mayo and cheese.
Initially his body will (and has been) crying out and craving carbs. Once he's over that, he'll be surprised how filling protein is

For some reason I see him opening a bucket full of chicken wings (not breaded, no sweet sauce!), and discovering this whole diet thing is quite doable. Protein and fats should keep him happy... Cheese, cheese, cheese, cold cuts, eggs, fish... He can go nuts with certain nuts... (Walnuts, pecans, macadamia's...).

Good luck. And remember, carbs demand carbs, so.... If he was eating that much bread, not having it any more should reduce the craving for it over time. He just needs to give it a moment to kick in.

you could buy a large pkt of chicken drumsticks and cook them in various ways. Add some salad and some of the other suggestions for variety.

Thanks, everyone, for all the great suggestions. I will certainly look into some of them for him.
It's tricky trying to encourage him to eat differently when he's so set in his ways.

Maybe go a bit slower with him if he’s going to dig in his heels? It’s hard enough to completely change your eating habits when it’s yourself doing it and you are totally on board. Maybe change a few things a week at first then more & more. If he rebels early on it’s not going to help matters at all. Maybe try not mentioning the changes and see if he enjoys having the different food without the pressure of noting the change.

You could suggest he wears a cgm for a couple of weeks, one week eating his current diet, the second trying the new foods. Once he sees how high and how long his current foods go and how low and steady the new goes he may be more motivated and see how he can change for himself. Each "high" is storing up damage to his eyes, limbs, heart to name but a few

However, long term you alone are not going to be able to change him. He needs to find his own motivation. He could join here himself?

The term "big boned" lol repeatedly told this growing up!
I have just made homemade mayo and shredded cabbage, courgette, a tiny bit of onion, radishes and anything that resembles a solid low carb veg chucked it all together and had half of that for my lunch and the rest I will have for my dinner with chicken, yummy!

I applaud you for reaching out and trying to help your partner with T2diabetes control.

Can I just check with you what sort of medication your partner is on for diabetes?
Need clarification, as you mention your partner has a physically demanding job, and with some diabetes meds there is a risk of lowering blood glucose too far, that can cause a hypo. This is something to be especially cautious about if making drastic changes to the high carb content of the diet, too quickly.

Might be better if you could persuade your partner to sign up as a member themself, and benefit from the experiece of our members who have faced similar challenge.

In this weather, how about a food flask with a hearty soup in it. If he thinks that wouldn't be enough, he could have a chicken portion or a couple of cold roasted chicken thighs/legs, or even some decent quality sausages.

(I sat decent quality because some have a lot of rusk in them and that's not ideal)

Make sure he has a decent breakfast with protein and fats (eggs are great) and he might not need as much at lunchtime.
