Meh! I've had it with all this palaver

So, eat the stuff you already bought but don't buy so much of it next time. Keep cutting it down until one week you're just buying a really small amount. Don't forget to add in other, healthy low carb foods to take the place of what you're not gonna buy.

And don't forget about deliveries from Iceland, Amazon, Asda, Sainsbury's - if the supermarkets don't deliver to your town, Ocado might and Amazon will. I buy loads of specialist food from Amazon.
 
Ok I replaced my two slices of toast with 1 slice.
I had a nectarine in the morning instead of orange and strawberry with whipped cream at lunch desert to replace rice pud. I did end up putting a tablespoon. Of brown sugar in top because they were quite sharp.
I checked co-op here and they only have quote unquote normal bread.

You could swap the brown sugar with a sweetener such as truvia or stevia. Still get the sweetness without the carb.
 
You’re heading in the right direction, well done I really like blueberries and raspberries with Lidl full fat yoghurt as a pud if I’ve got bs that don’t need any encouragement to head on up - and even if I haven’t. I know I can shove in some insulin but the fruit and yoghurt’s just for pleasure.
 
It really sounds like you need more help from your GP and diabetes team, who should be checking on your mood as well as doing the blood checks.
However, apart from that, I like a lot of other T2s find it much easier to go low carb.

Going low carb is easier than it used to be - as it is possible to buy stevia sweetened biscuits, syrup, chocolate or ice cream to snack on.
I'd really struggle if I had to give up chocolate, toast, etc. I did give up rice and potatoes more easily, especially after I discovered cauliflower rice - the frozen packs taste fine.
I buy 85% chocolate or stevia sweetened choc, and make occasional coconut or almond cakes. My blood are fine with 1 to 1 1/5 slices of low carb bread so I can have the odd slice of toast too.
I also occasionally have a low carb ice cream.
I usually have a small serving of raspberries after dinner, with greek yogurt or cream, and have cream on my morning seed based 'porridge'.
All of this means I don't feel deprived - and if I'm anticipating a rough few days I stock up on easy low carb snacks.
 
Potatoes - I have cauliflower mash, made with butter or cream, and also halloumi fries.

BTW my cholesterol is fine and my triglycerides actually improved on this diet.
 
I'm not chucking out things I already bought, And I halved the toast portions. It's something innit.

Maybe you should throw it out. If you MuST have bread (it’s an addiction that Brits seem to have) go for a low carb version like Livlife but CUT DOWN!

I don’t eat foods that are pretending to be other things. I had a really good diet before but since DX I have cut as many carbs as possible. It was hard for two weeks but since then I can take it or leave it.

It sounds like you need motivation. For me it was not seeing my children growing up or possible grandchildren. I’m not sure if your situation but for your family, friends, pets etc? It is only food and if you are currently addicted, you can get over it in two weeks or so, but you have to want to.... and it may be a hard two weeks. Get out and avoid the kitchen.

I have an acquaintance who recently died due to diabetes complications. She had a toe amputation then got sepsis and was dead in two weeks. Totally tragic but she didn’t take her DM seriously and continued to eat loads of carbs.

Please, please, take this seriously. You are putting yourself a needless risk. Xx

If you like a bread type thing, I make this stuff as and when I want some - it’s super quick, and super versatile.

2 tbsp ground almonds
1tbsp psyllium husk powder (amazon or eBay, it’s not dear)
1tsp baking powder
2 eggs
Seasoning/spices

Mix the dry ingredients together and beat in the eggs. Microwave on full power for two minutes. That’s it. You can toast it too.

This particular slab was made in a 6” square plastic tub and sliced across to make a sardine toastie. Sometimes I use a little round tub, sprinkle sesame seeds on top and have a burger bun. The whole mix is 4.7g carbs. Sometimes I’ll increase it by 50% and make a pizza, and this weekend I’ve been adding a couple of finely chopped raisins, a dried cherry, a few bits of peel, cinnamon, allspice and erythritol sweetener to the base mix to make an 8g carb massive hot cross bun.

It has a pretty good, springy, bread like texture, and as I say, less than 5g carb, 17g fat and 16g protein for a substantial amount of food that keeps me full for ages.

halloumi fries eh? I'll have to give them a whirl.....are they deep or shallow fried or oven baked?

Hi @Aethalides, I just wanted to wish you luck and you have some really great and helpful replies. Mel's 'quick bread' looks great :)
It's about taking little steps, you will get there in the end so be proud of the tiniest little achievements you make and give yourself a pat on the back for taking your meds.

Diabetes can be like riding a tiger, if you let go, it can savage you, but if you hold on, you might be able to steer it away from potential harm.

1. divide it into florets - not too tiny but not whacking great lumps. Bite sized for a reasonably greedy person (that's me).
2. Heat oven to 400F. Line a baking tray or spray on some cooking whatever
3. Spread the cauli out on the sheet. Drizzle with the oil, sprinkle with pepper. Roll florets around to evenly coat, if you want.
4. Bake for about 25 mins until soft and lightly golden.
5. Serve immediately.

Gorgeous!

Works well with broccoli too - I include the stems and they’ve become a pretty good chip substitute!
 
I also have rutabaga ( Swede) fries I cook em in an air fryer to cut down on cooking oil but they do just as well in the oven nice sprinkled with paprika or turmeric or what ever and sometimes with Parmesan cheese on.
Turnips make good chips too. And celeriac if you like the taste of celery...

I'd like to add kale crisps is quite good too, in a shallow pan, not too much oil, put in chopped kale until crispy and add a bit of salt and pepper. :) You could use the oven too, but do keep an eye on it because it can burn quite quickly. I am proud of you in taking a step in the right direction - taking meds. Food takes a bit of time, so please experiment and become a master chef at some point. :hilarious:
