If you like a bread type thing, I make this stuff as and when I want some - it’s super quick, and super versatile.
2 tbsp ground almonds
1tbsp psyllium husk powder (amazon or eBay, it’s not dear)
1tsp baking powder
2 eggs
Seasoning/spices
Mix the dry ingredients together and beat in the eggs. Microwave on full power for two minutes. That’s it. You can toast it too.
This particular slab was made in a 6” square plastic tub and sliced across to make a sardine toastie. Sometimes I use a little round tub, sprinkle sesame seeds on top and have a burger bun. The whole mix is 4.7g carbs. Sometimes I’ll increase it by 50% and make a pizza, and this weekend I’ve been adding a couple of finely chopped raisins, a dried cherry, a few bits of peel, cinnamon, allspice and erythritol sweetener to the base mix to make an 8g carb massive hot cross bun.
It has a pretty good, springy, bread like texture, and as I say, less than 5g carb, 17g fat and 16g protein for a substantial amount of food that keeps me full for ages.
