Type 2 My diet so far

About 3 weeks into my low carb diet and thought i would run it past the knowledgeable people on this forum

Have eggs on lettice and a creamy coffe for breakfast. Maybe 2 cups of creamy coffee a day and rest is water. Around 12 i have something on lettice (Mozzarella cheese, salami, cucumber, tin of machrel etc)

For dinner i have something with brocolli or something in lettice( fish, angus burgers, pork chops or loins). At night i have a riveta with something on (peanut butter, cottage cheese,Mozzarella cheese and cucumber etc) and 1 chunk of 85% dark chocolate

Its a bit basic at the moment but my bloods are doiing great ( 4.2-5.5 ).Is there anything i should be including in my daily or weekly diet and is there anything i have listed that i should take out as long term its not good
 
Sounds like you’re doing just fine. I’d be guided by your meter and any other metrics you’re using (weight etc) as well as taste/long term ability to stick to the way of eating.
 
As Goonergal says, it looks fine and stricter than mine. You may wish to expand on some things, such as salmon steak or other fish grilled with some steamed runner beans. Or meat grilled or oven cooked with a modicum of some other leafy veggies - an air fryer is a piece of equipment some here swear by (not swear at!). I have stirfry veg with chicken strips and a homemade sauce for low sugar. But I am using a higher carb allowance than you seem to be limiting yourself to.

You may wish to increase your fat intake a bit. The cream is a good start, and you use cheeses, so it is not a problem, but you can use olive oil and a vinaigrette mix to make things a bit more interesting. I am just a bit worried that you may find things a bit too bland after a while, and it does not need to be once you have gained confidence.

Hi Ultradad, it sounds like you are doing great, glad you are still able to enjoy your coffee!! I don't know if you have weight to lose but are you finding you are able to sustain your current weight on this diet, it doesn't seem like a lot of food to me but if it's keeping you full and keeping your glucose levels in check then of course that's fab. Well done. x
 
One thing I left out and is that you may find it lacking vitamins B12 and D3 and K2. You may benefit from the occasional meal of offal (kidneys, liver, etc) since it is lacking in the list of foods you shared above. It is not in the Angus Steaks, or the fish in any significant quantity, but offal is the best source. A couple of times a year should be considered and the bonus is that it is very low carb indeed. The other thing you will be missing is the added nutrients in commercial fortified flours and bread products that supply folate and iron and calcium that correct for deficiencies in normal life (aka fluoridation in a way) Liver will do this instead so another reason to keep it in the menu.

You're doing really well. Just expand as you're learning what agrees with you. Baked mushrooms, bacon or ham with your eggs, high meat content sausages or cheese for a very filling breakfast or lunch. Just check the nutritional info on things you might like to have and make yourself a list of possibles. While snacking isn't really part of the itinerary for me these days, I did get myself some cheeses, cold cuts and shrimp for the Eurovision night. (We did vote for the UK, by the way.). With your blood sugars doing very, very well, I think a pat on the back is in order. You took to this like a fish to water, your numbers even a tad on the low side! From the sound of it, you don't need to be quite so strict. Keep using your meter, find out what happens when you eat somewhere other than in a controlled environment, where someone else prepares your food for instance. It's hard to eat elsewhere fearlessly when you're starting out with this, so... Best dive straight in.
 
Thank you jokalsbeek and oldvatr :) Going to add bacon, mushroom and good ham to my list and see how it goes. Gonna have to find a way to make kidneys and liver taste nice. Always hated them as a kid and have avoided all my adult life lol. But i will find a way to add them to my list and man up :)

Thanks for the advice as i want to get into good habits now rather than later. I take things quite literal so carbs bad meat good mentality :). Dont think about things like mushrroms as i am focused on the meat hehe
 
Chicken livers are easier on the tastebuds. Goose livers may be associated with bad animal husbandry as in Foie Gras. Of the two other common livers, lambs liver has the less strong flavour IMO. Unfortunately, kidneys is kidneys and difficult to disguise.

Edit to add: of course, an easy way to get access to liver is to buy it already prepared as in liver pate.

I found that quickly frying the liver gave it a wonderful texture, not like the soggy stuff I remembered from my childhood.
