What is your current diet

Well, for the past week (since realizing I was pre-diabetic) I have started cutting out all sugars, and even eating whole wheat bread doesn't make me feel too good so this is how I have been eating: (examples)
Breakfast:
Slim-Fast 20 Gram Protein Shake (1 gram sugar, 5 grams fiber)
or
Avocado toast (whole wheat) with a fried egg (fried in extra virgin olive oil)
or
2 eggs scrambled, with 2 cups of spinach and a handful of cherry tomatoes.
or
1 bowl of steel cut oats with a handful of blackberries and 1 boiled egg
Lunch:
Low-salt Turkey (from Deli) on whole wheat bread with spinach & thick tomato slices.
or
Two skewers with Chicken & veggies like bell peppers, onions, mushrooms cooked on the BBQ the night before.
or
Chicken salad, with sliced up avocado and olives over spinach, romaine, mushrooms and sliced bell peppers
Dinner:
Baked Salmon with lemon and steamed broccoli & cauliflower
or
BBQ chicken with BBQ'd vegetables
or
Bean or lentil soup (home made).
Snacks:
Macadamia nuts (fresh off the tree outside my work), low salt nuts from the store like cashews, peanuts. Or, no salt nuts like walnuts, almonds.
Veggies: Carrots, tomatoes (okay it's a fruit), cucumber.
Boiled eggs
Fruit: Lemons, tangerines, grapes, blueberries, blackberries.
Oils: Olive oil only so far.
I love to eat veggies and love zucchini.
I have cut most all dairy out of my life a long time ago, but not because I didn't like it, but because it was troublesome for me. However, I do love dairy and I would love to incorporate it into my diet now. I just don't drink milk much and hard aged cheeses give me headaches, so I have just stayed away.
Now I am trying to find new recipes, and foods and I need to eat more veggies and find more recipes.
Before this, I ate mostly carbs, seriously... (pizza, donuts every morning, bagels, etc.) and a lot of fast food. I also drank a lot of sweet teas and soda, and beer on occasion, as well as coffee with a lot of sweet creamer, but now I drink only water.
I have really bad eating habits because I am a foodie, but this is how I have been eating for the past 7 days. I feel hungry sometimes and yet, I would rather be hungry than sick.
