No carb no sugar baking

So, I have been obsessed with finding at least one cakey bready thing made with no carbs and no sugar and after a bit of shopping and hours and hours on Pinterest I will this week attempt to create something delicious.
I give myself until Thursday before I smash my kitchen to pieces LOL.

* can't stop thinking about ginger cake*

The closest I've ever got is peanut butter cookies. But low carb is not no carbs so doesn't really matter... I'm afraid I can't remember which recipe I followed though.

No carbs will be a real challenge so please let us know if you find/create something :)

Sorry I don't have an answer, I'm in a similar position. I have a great recipe which requires a lot of white sugar and am looking for a suitable alternative. There seem to be questions surrounding Stevia and Splenda is so full of chemicals I'd be afraid of glowing in the dark.

Did you see my tweaked version of the low carb almond bread? They honestly are just like scones and have four ingredients - ground almonds, coconut flour, eggs and salt. They passed the "Mum taste test" when I took them round to her's for tea yesterday!

Try xylitol or erythritol for baking. Both great but xylitol easier to buy in uk ( its toxic for pets so be careful if you have a dog/cat). I'm a keen baker and share low carb recipes on my blog www.diabeticgoodbaking.com

Yes I have heard of those from the Pinterest recipes, will check it out. Tragically I have no cute cats or teeny dogs as my husband is allergic ( grounds for divorce if you ask em lol ). Will totally check out your blog and report back with successes and more likely failures hahaha.

As well as Ewelina's great blog, we have plenty of low carb (NOT no carb) baking recipes in the low carb area of the forum using nut and seed flours (almond, coconut, sesame). Many of the recipes will contain no sugar or sugar alternatives, but stevia and erythritol are quite safe for diabetic use (or xylitol in no dog households).

Nut, seeds, oils, fats, and eggs should all be an essential part of our LCHF diets, and sweet and savoury baked food are an excellent way of including them.

Thanks @ewelina I'll search it out next shopping adventure. I have promised to make the recipe at the family bbq in a couple of weeks so want to have a practice before then.

Xylitol is available in Sainsbury, Tesco and Waitrose. You can also buy it in health food stores such as Holland&Barrett

Last week-end we held our bi-annual art fair for the Wysall Watercolour Group. Great success and I sold my first painting. The members provide the cakes for the refreshments table and there were some beautiful ones. I made a stracciatella cake from a recipe on here and labelled it 'diabetes friendly' and I sold the lot, 12 slices. I got quite a few comments about how nice it was to find a cake that is suitable for diabetic people to eat and I was so proud.

Made the Lemon Cake on @ewelina blog, it is awesome - tastes just like 'proper' cake :) last weekend made coconut macaroons and peanut butter cookies - all good!

Can honey work as a substitute? I know it isn't carb free, but they aren't empty carbs and I need to make a syrup to drizzle and honey seems like a reasonable option. Manuka has 16.7 g carbs/100g. I thought about Agave nectar but that's around 78g.

Are you sure its 16.7g per 100g. Honey is nearly pure sugar. Not recommended for us I'm afraid :(

Well spotted @ewelina. **** those kiwis, I was looking at the per tablespoon amounts, they are the opposite way round to "normal". So I guess the next question is can you make a drizzle with Xylitol?
