Hi there,
just in case anyone is interested in the saga of the oatcakes... I had another go with the left over batter mix today. It seemed very thick so I diluted it with water quite a lot. (consistency of pouring cream..) I had a visitor and we got talking which was good because It stopped me being quite so impatient. The result was that the oatcake formed and cooked beautifully. It was much thinner than yesterdays attempt and was over a foot in diameter. It could be cut into sections and each section was only about 1-2mm deep and was firm enough to hold like a large cracker. The taste was pleasant too we all were agreed on that. A massive improvement on yesterday's attempt. I can also see that if cut into sections and allowed to go cold these would be fine as a cracker alternative.
