I use quorn mince.
Spag bol, with squash, (spaghetti squash recently)
quorn, onions, tinned tomato, herbs, garlic, mushroom, maybe butter beans.
chili.
quorn, onions, kidney beans, garlic, chili, peppers, tomato, beans, maybe haricot beans.
curry
quorn pieces, any form of curry mix, or from scratch, chickpeas, butter beans, fresh beans onions, peppers.
Chinese
quorn pieces, five spice, sugar snap peas, cauli, broccoli, small carrot, few beansprouts, anything you have left over as well.
I find I can replace any meat, and it's good in any recipe.
I also tend to adapt recipes, I find kale is a good food, and goes into all the above, especially Chinese.
I avoid the rice and pasta, so include more mushrooms, chickpeas, and beans, depending on the meal.
I have accepted the usual food is a thing of the past, so concentrate on getting other stuff in, usually vegetables.
The other thing is I really enjoy cooking, and can find what goes together, so even if it tastes like **** at first, I can add the herbs and spices to get a decent meal. If not, just add chili!
(it was close a few days ago, big pan of chinese to freeze for a few meals, I tried a bought black bean sauce, it was disgusting, and just salty with an unpleasant aftertaste. I had to tip the entire pan into a sieve, wash it several times, recook. and add a soy and sesame mix to recover it,
