Goonergal, Thanks for replying. Fatigue is always after eating, I'm a usual get up and go person...A Lark some would say! Although I do force myself and when I was commuting daily I'd like a 20 min nap on the train on the way home. This helped a little to balance out the previous nights sleep. I feel I've adapted well to general poor sleep. I would say every 5-6 weeks I need a weekend of complete rest which helps me reset a little.
Yes I'm taking Vit D too at 5000iu. I track my foods but I will start taking notes for fatigue levels now. I wonder if I should take Sugar levels again Pre, 1 hours and 2 hours after eating?

For the last 3 weeks it seems that literary everything I eat, I get a completely overwhelming (to the point of dangerous) fatigue. I mean really bad I would not drive. I've tracked the foods and its the same for everything. Yesterday was 3 egg omelette, 2 bacon rashers, courgette and some feta. - Bang sleep, Lunch was Tuna in Water, Cucumber salad...Sleept..Tea was 4 chicken thigh tikka kebab and cabbage salad and whoosh sleep. It's really bad now I've suffered this for years and always attributed Sugar being the main driver in post food fatigue. Now I know it's not sugar as carbs are always under 20g, it was better since changing diets but it's now worse than ever. I've not or have have never been the best at night time sleep (5-6 hours of broken sleep) I've also tried 16/8 and 5/2 to break this cycle but nothing seems to be working. I eat slowly and enjoy my food. I take Mg, K and B12. Drink Apple Cider and lemon and low salt spring water with the meals (not every meal) Brisk walks for 10 mins after eating too. (Not always) I've stopped taking readings now as these were averaging 5-6 range (fasting) It's really getting me and the family down now.
Any thoughts?
I eat roughly 1800 cals per day, work out 4-5 times per week of lifting weights and I have been prioritising Protein 160, carbs 20 and never over the fat range of 110g. It's been going great for 90% of the time, my weight has dropped but is pretty much stuck at 76kg now. ideally I'd like 70-72kg range.
