Hi all, does anyone have any ideas for using spiralized veg? no coriander or chillis or celery - and low carb. I've got a spiralizer that I haven't used yet, and I'd like to.

I spiralize on a daily basis this blog is amazing - it's an American girl and she does sell the machine and a cook book but the site is jam packed with recipes and tips - not all low carb but some interesting concoctions

courgettes or celeriac to make 'noodles' for stir fry or 'pasta' with sauce (assuming you don't mind/arent allergic to celeriac)

carrots can be sprialized but depends on how low carb you are going, carrot, courgette and celeriac makes a nice spaghetti to serve with a normal or veggie sauce

cucumber and carrots to make a salad base as a change to salad leaves.

If you have a kindle there are books on spiralizer recipes

Courgettes yes, celeriac no. I knew you could spiralized carrots (I haven't had problems with carrots) but I didn't know you could do cucumber - I'd have thought it was too wet and flimsy. It was really suggestions for a sauce or other means of flavouring spiralized veg rather than a list of veg to be spiralized that I was after. I also wondered what you could do with spiralized beetroot - other than in a salad? I feel it's still too cold for salads yet. I just wondered...

I'm addicted to courgetti at the moment, there is so much you can do with it! Firstly I dry it off with some kitchen roll then dry fry it. A simple thing to do is just season with salt and pepper then finish off with a knob of butter. Then add to it what you like from there. This evening I added toasted pine nuts and pesto. Good with added chorizo, olives, sun-dried tomato and feta. Chilli flakes and a squeeze of lime. Carbonara sauce. Haven't tried beetroot what with it being a root veg but would imagine it would be good with some sort of goats cheese and walnut sauce. Be brave and experimental - just chuck in whatever you have in your cupboards. You'll be amazed at what you can create!
