Kudos to you for keeping it up. How do you measure carbs? I find it very hard to calculate. I never know how much to eat and how often. So, I stick with low carb foods thoughout the day. But it's been working well so far.
I don't, really. I don't eat any high carb bulk items - bread, rice, pasta, pastry, potatoes, fruit, that sort of thing, so I don't need to guess the weight I've eaten and from that estimate total carb eaten. Easier just to set the dial for those permanently to zero. Also out, for the same reason, is nearly everything that you could buy ready made.
I mainly eat meat and dairy, and some above ground veg. The veg is where my carb comes from. A day's worth of carbs might be 16g or it might be 26g, somewhere around 20. As long as I stay in ketosis, it doesn't seem to matter. I've found I can now manage pulses and beans reasonably well every so often, so they've come back into meals in the last couple of years.
In truth I haven't found it difficult. The main thing is that at no point since December 2019 have I ever been hungry. And while I do sometimes miss some of the things I used to eat, I don't miss the complement of increasingly nasty diabetic symptoms that I'd been having since 2009.
I suggest setting your own goals, then finding what works for you in getting there, and then sticking at it. Just because we've all had high blood glucose doesn't necessarily mean that we all have the exact same causes. Your house might be full of water, but you'd do different things to fix it depending on whether it's come from a burst pipe under the floorboards or through a hole in the roof.
