Type 2 in remission after gallbladder removal...

I have been type 2 for over 10 years. I have always been carefull with my diet & taking my medication on time. Despite that my average sugar levels have been around 12-15 mmol/L. One & a half month ago I had my gallbaldder removed bacuse it can lead to complications due to the stones it was producing. Since then my avarege sugar level have dropped down to 5-6 mmol/L. It took my interest so I decided to experiment by eating carbs & even drinking wine. As a result it spikes to 8-10 but then comes down pretty rapidly to 5-6! Is this special to me? What is happening?
 
It seems I can't edit my post. When I said eating carbs & drinking wine, I meant within reason just to see if there is a remission, as none I did before.
 
I would think that the gallstones were causing inflammation and/or a chronic infection which was raising your blood sugars. Now it’s all been removed your blood sugars have dropped to a more normal level.
 
Thank you very much Rachox. Removal of the galllblaldder changes things (to my research) i.e. metabolism. My next step is to cut out my tablets in total for the coming days/weeks (depending on outcome) & see what happens. I will be posting my findings/progress here.
