Type 2 Life

Afternoon everyone, hope you're all as well as can be and having no problems with other halves (@tina_marie ;)).

Been to my Uncle's funeral today, quite sad. Met up with many cousins that I haven't seen for years, so that was nice, just wish it had been for a better reason.
I had a quite pleasant surprise, I ate 1 small meat pasty and an hour(ish) later my reading was 5.7. I was expecting it to be up because it was more pastry than filling.
 
@Diamum5972 I forgot to mention using chia seeds in sugar-free jam! It takes about 15 minutes to make from start to finish and it's delicious. Put some berries, water, and sweetener of choice on the stove, heat it up until you can mash the berries with a fork, take it off the heat and stir in some chia seeds. DONE! Keeps for up to two weeks in the fridge, and can also be frozen. I am so focussed on the BS numbers that I keep forgetting to weigh myself and look at my weightloss. Well another kilo and a bit has gone this week making that a total of 18.5 kilos since the 10th Feb, in old money that is just a little over 40lbs or almost 3 stone, which even amazed me when I did the conversion!

You absolute winner ... well done @Lindy1706 - guess you won't be following the 'Eatwell' plate tonight, enjoy your LHCF meal!

You can call me Delia for sure! :) It's funny, I didn't really do much cooking before I got the news last year about my elevated blood sugar levels. I bought a lot of ready-made stuff, or did takeout. Like, low quality thai (rice rice rice), or sushi ... from the grocery store. It wasn't even that good! I was unwittingly shooting my blood sugar sky high for overpriced, not particularly tasty stuff because it was easier than making something myself. That's all changed now.

Cooking is good, I've always enjoyed it and thought about becoming a cook, until a cook told me that it put her off food.. I was 12 at the time and went and did science. It is a major relaxation for me... just in the past it seems I may have been cooking and eating too much of the "wrong" things.. as a DB I think it really helps that I prepare my own food and so get what I want to eat. The family have adjusted rather well but not the same degree, which is fine. I find going out pretty tricky as a result...

Hi @KimG sorry to read you're heading for a stressful time. It not easy to tackle stress but sometimes it helps to share the load. So if you want a place to let it out, this is the thread for you. I love cooking and since Ron was diagnosed we have had a lot of food that we have never tried before so I guess that's a plus side for us.

My mother has recently been diagnosed with brain cancer. This has come as quite a shock, particularly as she has been so active and independent at home.

She was rushed into hospital with sepsis, chest, knee and kidney infections. A CT scan revealed a brain tumour. She is in hospital and has been for five weeks. I've been told 2-3 weeks, 3-4 days and now possibly 6-8 weeks left before she passes. I'm so stressed as I have a monumental task ahead of me to find a suitable nursing home with palliative/end of life care, sort out her finances and estate.

My LCHF has gone to pot, I'm not eating well, sometimes nothing at all, at other times things I shouldn't eat. My bg has gone from the mid 5's to 9, 11, 13 some days. Hopefully, things should settle down once I can find my mum a good nursing home. :shy:

Hello @KimG a shock with news like yours would knock the stuffing out of anyone. I don't have too much experience of cancer like this so don't have too many suggestions. What support are you getting from the hospital? Are there any McMillans close to hand? Do you live close to the hospital / mothers home, I ask as traveling can be a stress of its own.
It might sound a little off but I would say you have to look after yourself so you are in as good shape as you can be to be able to do the things you have to. Eating little and often would help.

So sorry to hear your news Kim. I know we've not "met" before but I wish you well with the task ahead. If you give your closest city maybe one of us can give suggestions?

one thing I do like is celeriac fries, and I never liked celeriac before.
I tried it boiled and mashed but it was wishy washy tasting towards the smell. I think mayb I should've baked it then mashed cos the cooking water probs got all the flavour
 
@KimG I'm so sorry to hear your news, sending you massive hugs. My auntie died of cancer and my cousins said MacMillan nurses were a fantastic help at the time.
