Type 2 Life

@debrasue - hmmm very muggy and overcast here in York. Went out at 11am and was back just after 2pm. Only went to the Bank and had a "rummage" in the 7 Charity Shops = I never bought anything, R bought a Gardening Book and a Medina Paperweight. Just had a light lunch of Salami and Mustard Sandwich and now just 'lurking' about and reading threads for an hour.:)

I love charity shops! There's always that sense of suppressed excitement that you might find an absolute bargain and something that you've been searching for forever. I rarely come away empty-handed; you've obviously got better self-restraint than me, especially if you visited 7 of them!
I always feel I need to give my hands a good wash when I get home, though, LOL.... (Lady Macbeth syndrome?)

ok, so I had saved loads of recipes but alas to a document on the "desktop" forgetting that they were NOT shortucts and once deleted they are usually "poof" "gone" ie NOT in the recycle bin I went ahead and deleted lots of stuff from the desktop...but, that said, I do have them printed off so...first of all I will search the site and if that fails I will copy out the recipe I want....or mayb just scan it.....

Think both of you have been promised recipes from me the stracciatella cake and cauliflower bread although thinking back I think the bread was one of the ladies @debrasue possibly BUT whoever/whenever recipes are here...fortunately saved in various threads I've posted them in so now saved again on my lappy

Stracciatella cake:

110gm softened butter; 120g cream cheese; 5 med eggs; 185g almond flour (ground almonds); sweetener equivalent to 100g. sugar (I use trivia - perfect); 1tbsp baking powder; vanilla, almond or orange essence; 50g of 75-85% chocolate - I use solid cacao..... Oven 170C....lightly grease a small loaf tin.... Mix butter and cream cheese really well; add sweetener and essence; mix in eggs really well, one at a time; stir in almond flour and BP; add chocolate bits... pour mix into tin and level the top; 55 minutes at 170C fan - 190 non-fan assisted.... apparently the cake freezes well too...

My sugar substitute is Sucron..... and I add almond essence. Not tried the vanilla or orange essences but I do plan to try lemon..... The first time I made it I used dark chocolate chips but I found it didn't go too well with the cake for my taste, far nicer without..... 45 minutes has been plenty for my oven.

I like cauliflower bread too .... often used as a pizza base apparently and I think it would work well.... I just had it with some feta cheese....the first half and the day after I fried the second half in a bit of butter to reheat it and had it with more of the same cheese......

CAULIFLOWER BREAD
Cauliflower Bread:
1 cauliflower - put it in the blender with a clove of garlic
mix in 2-3 eggs, 100grammes grated cheese or parmesan, pinch of oregano & basil
turn out onto baking tray lined with greaseproof paper (pat down & shape)
cook in oven 40mins @170C (325F)
turn over (turn out onto another baking tray lined with greaseproof paper, removing the original greaseproof paper)
cook for a further 20 mins
remove from the oven and cool on a cooling rack
simples!
excellent as a pizza base :)

ooh, must give you this next recipe too..... sorry to bombard you but I know you said you liked chocolate... well this is quick and easy to make and satisfies the chocolate cravings ....

Chia seed pudding (@Brunneria's version)
Boil kettle
grab a 500 ml measuring jug
tip in 2 hugely heaped teasp of good cocoa powder (my teaspoons are bigger than average)
tip in about half as much again of your sugar substitute
tip in a huge dollop of peanut butter
tip in about 5 heaped dessert spoons of chia seeds
pour in boiling water to about the 500ml mark
stir until all lumps gone.

leave to sit until suitably gloopy.

I don't use so much sweetener but that's to my taste, I used crunchy PB but intend to try it with other nut butters too.....and I used 5 level tablespoons of chia seeds today (you just can't heap chia seeds, its impossible)

I got my chia seeds and the ground almonds on eBay but if you have a healthfood shop nearby they might have it and I guess if your Morrison's is big enough they should at least have the almond flour (I'm guessing eBay is cheaper though) let me know if you need the link
 
Hi all,

Been a wee bit quiet recently but we have rather a lot going on.

Husband has had a Prostate scare with high Blood tests so he has an MRI booked for tomorrow and then a biopsy booked for next Tuesday and me not wanting to feel left out! managed to find a lump in my breast last Wednesday and have an appointment at the breast clinic tomorrow morning!

Tomorrow is going to be such fun me at the breast clinic at 10am and Husband in for an MRI at 5pm......I think I will take a packed lunch and we will stay put and picnic!

Feeling like someone is giving us one hell of a test of strength at the moment!
Wow - you are being put to the test right now, aren't you Lindy? Try and stay positive, though, because it sounds as if you're both being well-monitored, which means if there is anything of note, it will only be in the early stages and thus quite easily and successfully treated. I have had friends with both prostate and breast issues (different friends!) and they sailed through the processes and are now both free and clear. And, after all, there may in fact be nothing to worry about..... Big hugs x
 
Hi @13lizanne as @Sable_Jan guessed it is low carb cake made with sugar substitutes. I'm browsing the Ditch the Carbs website and looking at making Sugar Free Macaroons and Low Carb Chocolate Berry Brownies :) tying to work out difference between stevia and xylitol to make sure I get it right. The class cheered when I said my goal for the next week is to do some baking LOL

I made them a low carb lemon cake recently and everyone on the course loved it :p
I think each recipe writer uses their own favourite sweetener. I know stevia is natural, not sure about xylitol....my current preference is Total Sweet but its expensive. Got mine cheap at 99p/bag (as opposed to £2.50) but by the time I'd received it and tried it they'd sold out....still got a few bags left. Not quite so sweet as sugar but I think our (well mine at least) tastebuds are preferring less sweet stuff now.....

I realised I was making too much fuss on a cold when others have much more serious problems. There are some absolute soldiers on here. I'm just a wuss. Ha ha
Tis true lots of us have lots of things but a nasty cold can make you feel really cr*ppy too.....glad you are feeling better
 
Good morning all! A positive 5.3 on the FBG scale today, and 72.0 kg - lowest ever :) goal is 70kg which will be around 10 kgs down. So a good start to Thursday.

Off to swim now then home for a Full English LCHF of course ;) have a great day friends!
Need to work on my weight......Fasting was 6.1 today...strange...but post brekky was 5.5 (3 hours though) so happy with that.....no swimming for me...I swim like a brick.....just walking with the dogs when I can....but we've missed this afternoon out cos of the rain cos Rocks doesn't like the rain....(nor do I really :oops:)

All the best for the tests, both of you....guess you could make a day of it if there's a park nearby and the weather is nice.....especially if it is a bit of a trek to the hospital.

So in the last 4 months I've got my BG under control (I think) and my cholesterol is under control - but my last BP was 159/97 so worrying. But today I went to the surgery and did 3 readings, average is 116/73 .. so I guess I should be pleased and all that trawling up and down the pool must be worth it?

having a 24 hour monitor fitted tomorrow.....Had one years back and hope this one is smaller and works properly.....when I get my BP done the cuff hurts so much when tightened it pushes my BP up... (its the fibromyalgia that does it..hurts like a very hot place) even when the GP used the hand pump one at my last visit he could see in my face how much it hurt......

Time for doggy teas now.....Rocks and I missed our walkies today due to the rain but I know at least one of the dogs outdoors will have stayed out in the rain instead of going into their pen.....Bella will be a soggy Bella so it will be tea and towel for her and maybe put her heat lamp on but that might encourage her to stay outside more....

No problem at all..... I've just noticed that at the time of posting I used "sucron" I now use Total Sweet

Are that is interesting - I asked this last night but I don't think anyone replied. I used Total Sweet recently as available from Holland & Barrett. But don't yet understand the rules about replacing sugar with these products.
