Type 2 relatively newly diagnosed

Some of us post what we eat daily here.
Lots of ideas. Some of us are cooks with plenty of time, others are more in need of grab and go.
What is important is that, over time, you'll find a way of eating that suits your body and your lifestyle for the rest of your life (woefl) rather than short term diet.

You'll get there, there's a lot of learning and rethinking and it takes time but there's no rush.

When I was first diagnosed, I got a few cook books... Half the ingredients I couldn't pronounce, and I certainly didn't know where to get them. They all had very little in common with actual food, in any case. So just stick with the simple stuff. Meat, poultry, fish, full fat dairy and eggs, above ground veg... Just replace spuds with extra veg or an extra helping of steak. ;) Heck, if I can go to McDonalds and order a Bacon McTasty without a bun while on the road, I'm all good. You can make this as easy or as hard as you want to, really! :)
 
Im dont eat a lot of potatoes but I do enjoy home made curries and rice. My favorite being basmati.

I have been trying to replace the rice with mixed vegetables, as a filler.

I freely admit a treat, which would probably be once a month would be fish, chips and mushy peas.
You could replace the rice with cauliflower rice its filling. The fish is okay (without the batter) and mushy peas are okay for me anyway. The chips are a no for me but you could try haloumi chips, I've started to air fry cabbage strips and season with pepper they are great as a snack ;)
 
Hi. First if you do have baked beans have the reduced sugar variety. If you continue to lose weight despite eating well i.e. proteins, fats etc rather than carbs then it's always possible you could be Late onset T1 (LADA). If so your meds would need to changed. See how you go.
