Yesterday:

B: Two poached eggs and scallops with flat-leaf parsley, asparagus spears smothered with butter, all seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine
Tuna steaks rolled in finely chopped celery and thyme, baked with sweet red peppers and aubergines, moistened with double cream and topped with extra mature Cheddar.
Steamed French beans and mangetout smothered with butter.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Seafood salad made with king prawns and brown shrimps, avocado, cucumber, baby plum tomatoes, mint, salad onions and Kalamata olives with home-made aioli for dipping and topped with roasted macadamia nuts.
Water to swallow tablets.

D: Salad made with anchovy fillets, eggs, avocado, lettuce, Padrón chillies, salad onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with walnut halves.

Almonds, hazelnuts and brazils.
Strawberries to round off lunch.

S: Dry and sunny but a cold, penetrating wind, so knocked off early for a warm 'em up black filter coffee.

D: Smoked salmon and cream cheese salad made with lettuce, celery, baby plum tomatoes, salad onions and mustard cress, dressed with olive oil, thyme and a touch of lemon juice, topped with toasted pumpkin seeds.

Hi everyone, I’m Sue, been lurking for a while. Diagnosed May 2023 at 83 Hba1c, 2x500mg Metformin,July Hba1c 35, Nov Hba1c 33, 1xMetformin. Lost 2st. Very grateful for all the ideas,information and inspiration on these forums, now to keep it up! Love cooking

D Savoury mince, mashed cauli and celeriac
 
Today so far:

B : Huel Black shake, with 1/3rd pint of semi skimmed milk.

L : Baked chicken breast (with this dry rub : https://www.simplyrecipes.com/recipes/the_best_dry_rub_for_chicken/), 2 slices Gouda, 6 x cherry tomatoes. followed with a Warrior Peanut butter crunch bar. 330 ml diet coke.

D: planned for slow cooked Pork Leg with halloumi fries, and followed up with 150g of greek yoghurt with a tablespoon of Bulk Peanut butter

Same meal as i had yesterday and Glucose stayed within 4-6.5 mm/ol all day.
