Type 2s: What have you eaten today?

Evening all

Yesterday:

B: Two poached eggs and scallops with parsley, asparagus spears smothered with butter, all seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine
Tuna steaks rolled in finely chopped celery and thyme, baked with red peppers and mushrooms, moistened with double cream and topped with extra mature Cheddar cheese.
Steamed French beans with a knob of butter.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Seafood salad made with king prawns and brown shrimps, avocado, baby plum tomatoes, mint, salad onions and Kalamata olives with home-made aioli for dipping and topped with roasted macadamia nuts.
Water to swallow tablets.
 
B.: muesli (1/2 cup oats w/ berries and soya milk)
L: Vegetable soup
D: 30g (raw) bulghur wheat w/ peas, mushroom, tomatoes and vegan chilli

If I have a late snack it will just be a small bowl of stewed apple with no sugar natural yoghurt

Good evening @Welshman1952 and welcome aboard this thread for type 2 foodies. It's good to see you here.
Thanks @LivingLightly - a few years ago, I was a regular participant but stopped posting (and, if I'm honest became very complacent in the last year or so). Anyway, my T2 has a nasty habit of biting me on the b*m if I don't keep a careful eye. So, I'm back and using the forum as an aid to staying on the "straight and narrow".

7 years ago I had this in total remission but complacency alongside a "it can't happen to me" mindset set my BGs on a vertical spiral. Tomorrow I have a meeting with my GP and there's a strong chance he will recommend meds but I'm hoping he will give me a little time to get this all back in line with a healthy diet and gentle exercise. We will see
.

Thanks @Welshman1952 for your reply. Yes, keeping our blood glucose levels in check is a daily challenge. I'm always on the lookout for new, mouthwatering recipes that won't spike me and this forum provides lots of inspiration.

I hope tomorrow's session with your GP is helpful.
 
Today I had a low-carb "kedgeree". Made with cauliflower rice, onions, salmon, smoked frankfurter, boiled eggs and a few peas. Basically, I used what I had in. It was very nice, but it could do with a few tweaks.

Evening @IanBish. Your low-carb 'kedgeree' sounds tasty. Just the thing for cold weather.

With hindsight, how would you tweak it? I'd be tempted to add a cinnamon stick, some turmeric and perhaps the contents of a cardamom pod if I had those spices to hand.

B: Two eggs scrambled in butter with a dollop of double cream, sautéed chestnut mushrooms and baby plum tomatoes, topped with parsley and seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine
Baked whole sea bass, belly stuffed with sprigs of thyme and garlic, drizzled with olive oil.
Steamed asparagus spears smothered with butter.
A medley of baked broccoli, onions, and sweet red peppers.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Salad made with anchovy fillets, eggs, avocado, lettuce, Padrón chillies, salad onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with walnut halves.
 
B: Muesli
L: 5x falafel balls
T: vegan chilli w/ quinoa, mushrooms, tomato, peas and onion

If I fancy a snack later I have some stewed apple and sugar free yoghurt

On top of the world today because my average BG all day is 5.9 and at my GP appt it was agreed I can continue working to improve my BGs with diet and exercise. Next Hba1c is next April!!

I did put some curry powder in, but more would have been better, I think. It also could have done with some garlic, which I'd run out of. Also, I think it could have been fried in more butter. Thank you, it was tasty.

L: Clams with king prawns in garlicky white wine sauce with sun-dried tomatoes, spinach, onion, double cream, rosemary, butter and parmesan cheese.
Steamed French beans and mangetout with toasted pine nuts.
Garlic chestnut mushrooms.
Water to drink.
Skipped pud.

D: Seafood salad made with crab, brown shrimps, lettuce, celery, apple peel and baby plum tomatoes with a dollop of home-made aioli for dipping, topped with parsley and toasted almonds.
Water to swallow tablets.
 
Alas I have fallen, quite a way as it happens, the horned gargoyle of carb had me, and thus:

B -12.15pm - 2 slices bacon grilled in sourdough bagette (an absolute belter)

D - 5.30pm - lamb tagine (lamb, apricots, peppers, chick peas) on cous-cous

the gargoyle whispered that christmas is drifting this way (who knew!) and that I needed to prepare

B - 10.45am - 2 slices Vortigen toasted, half cup of greek yoghurt

D - 5.30pm - roast chicken on butter beans with a cream roast garlic and onion sauce, little gem and fennel salad, couple glasses Viognier

all going well until: dessert - chestnut cake with caramelised slices tangerine and chestnut puree sauce (and double cream)

Evening @bitofagit. Cauliflower couscous makes a tasty, low carb alternative to couscous.

Water to swallow tablet.
Espresso.

L: Salmon fillets baked en papillote with mushrooms, spinach, black olives, lemon zest, sprigs of thyme, sage leaves and butter.
Steamed carrot batons and French beans smothered with butter.
Water to drink.
Skipped pud.

D Seafood salad using tiger prawns, brown shrimps, lettuce, baby plum tomatoes, celery, Romano peppers, Kalamata olives, mint and salad onions, dressed with an olive oil, balsamic and garlic vinaigrette, topped with roasted macadamia nuts.
Water to swallow tablets.
