Type 2s: What have you eaten today?

Yesterday
B: large mug of coffee with almond milk and double cream
L: sweet Chaffee with butter
D: 4 fried eggs with Wensleydale cheese crumbled on the top. Raspberries with yogurt and chopped nuts.

I’ve bought a waffle maker. I used to make them when I first started keto over 3 years ago but didn’t like the texture as they were floppy (only way to describe them!) But now following a new recipe which adds xanthan gum which crisps them up. I’ve been having them to make a sandwich and yesterday added erythritol to the mix and had them with butter. interested in the recipe? BTW I haven’t got lupin flour so sub’d almond or coconut flour and it works just as well.

Hi @cdpm. I never tire of scrambled eggs. I enjoy them for breakfast on Sundays, when I have a little more time, usually with a tomato and mushrooms.

I expect eggs, cooked any way you like them, make a nourishing meal, especially while your gums are still tender.
 
Evening all

Yesterday:

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and baby plum tomatoes, seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine.
Baked whole sea bass, belly stuffed with sprigs of tarragon and garlic, drizzled with olive oil.
Steamed asparagus spears smothered with butter.
A medley of baked broccoli, leeks, onions, garlic and sweet red peppers.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Salad made with anchovy fillets, eggs, avocado, white cup mushrooms, Padrón chillies, salad onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with walnuts.
Water to wash down tablets.

B: Two poached eggs topped with a knob of butter, avocado and crevettes, seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Clams and tiger prawns in white wine sauce with sun-dried tomatoes, spinach, garlic, leeks, double cream, rosemary, butter, olive oil and parmesan cheese.
Steamed French beans and mangetout smothered with butter.
Garlic chestnut mushrooms.
Water to drink.
Skipped pud.

D: Seafood salad made with brown shrimps, mussels, shredded red cabbage, apple peel, celery, white cup mushrooms and baby plum tomatoes with a dollop of aioli for dipping, topped with toasted pistachios.
Water to swallow tablets.

B: Two poached eggs with a knob of butter and avocado seasoned with black pepper plus a wedge of Teifi (unpasteurised cow's milk cheese from Wales).
Water to swallow tablet.
Espresso.

L: Wild Alaskan salmon fillets baked with broccoli, chestnut mushrooms, double cream and lemon verbena.
Steamed asparagus spears and French beans smothered with butter
Water to drink.
Skipped pud.

D Seafood salad using tiger prawns, brown shrimps, rocket, baby plum tomatoes, celery, Romano peppers, cucumber, Halkidiki olives and salad onions, dressed with an olive oil, balsamic and garlic vinaigrette, with roasted macadamias.
Water to wash down tablets.
 
Hi @cdpm. Yet, last week's chilli was trouble-free. Baffling isn't it?
I started to consider maybe the issue is in the tomatoes because all the homemade soups have them even the pork ones which bother me leading me to think it's pork too. But I recently had a homemade bean soup with tomatoes but had no problems.
Tomatoes is the only exact same ingredient in all the homemade soups but no issues with the non beef or pork ones. So it's pretty hard to narrow down. Baffling for sure.
 
Tomatoes just made me look up the nightshade family of vegetables. They can cause inflammation apparently. Other veg in the group include potatoes, bell pepper and eggplant (aubergine for us here!)
Do any of these also cause problems? Not that you need to remove any more things from your diet!!

Not so far thankfully.

Didn't really feel well. Did my food shopping and saw a few more of my limited food choices with price increases again.

Water to swallow tablet.
Espresso.

L: Baked halloumi and sweet red peppers,
Roast cauliflower with Egyptian duqqah using toasted almonds. hazelnuts, pistachios. sesame, fennel, cumin and coriander seeds.
Salad made wiith cucumber, rocket, salad onions, raspberries, strawberry halves and mint, dressed with olive oil, garlic, a touch of lemon juice and topped with toasted sesame seeds.
Water to drink.

Skipped pud.
D: Seafood salad made with brown shrimps and mussels, lettuce, Romano peppers, celery, baby plum tomatoes, Kalamata olives, oregano and salad onions, dressed with an olive oil, balsamic and garlic vinaigrette, topped with pistachios.
Water to wash down tablets.
 
Evening @cdpm. I can't handle pasta, but enjoy many of our favourite Italian recipes by substituting courgetti (spiralised courgettes).
My body can't handle any foods.
Vegetables or even food that isn't supposed to raise your blood sugar by much. I have to eat things anyway and mostly feel bad.

I never tire of eggs with avocado. Those two seem to be made for each other.
Eggs cooked any way you like them make a nourishing meal.
You're okay with cottage cheese too.
Hang in there. Things will improve.

L: Walnut and mushroom nut roast made with onions, eggs and flax 'egg', (strictly no breadcrumbs) garlic, vegetable stock and rosemary.
Steamed Brussels sprouts with toasted slivered almonds and a knob of butter.
Carrots cut on the diagonal, onions and apple peel sautéed in butter.
Water to drink.
Skipped pud.

D: Seafood salad made with mussels and brown shrimps, lettuce, Romano peppers, celery, baby plum tomatoes, halkidiki olives, lemon verbena and salad onions, with a dollop of home-made aioli for dipping, topped with roasted macadamias.
Water to wash down tablets.
