Type 2s: What have you eaten today?

Evening all

Yesterday:

B: Two poached eggs and scallops, asparagus spears smothered with butter, all seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine.
Tuna steaks rolled in finely chopped celery and oregano, baked with sweet red peppers and aubergines, moistened with double cream and topped with extra mature Cheddar cheese.
Steamed French beans and mangetout with a knob of butter..
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Seafood salad made with king prawns and brown shrimps, avocado, baby plum tomatoes, salad onions and Kalamata olives with home-made aioli for dipping and topped with roasted macadamia nuts.
Water to wash down tablets.

And 4 boiled potatoes

So on to the strict vegetarian diet now. Not vegan but at least no animal foods- mainly no cholesterol. If I accidentally ate animal broth put in soup I won't freak because I already have so many food issues.

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and baby plum tomatoes, all seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine.
Baked whole sea bass, belly stuffed with fennel fronds and garlic, drizzled with olive oil.
Steamed asparagus spears topped with a knob of butter.
Baked calabrese, leeks, onions, garlic and sweet red peppers.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Salad made with anchovy fillets, eggs, avocado, lettuce, Padrón chillies, salad onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with pecan halves.
Water to wash down tablets.

L: Courgetti alla carbonara made with chestnut mushrooms, eggs, double cream, Parmesan cheese, nutmeg, butter and spiralised courgettes, topped with extra Parmesan and flat-leaf parsley.
Steamed French beans and mangetout smothered with butter.
Water to drink.
Skipped pud.

D: Seafood salad made with brown shrimps, mussels, shredded red cabbage, apple peel, celery, thyme and baby plum tomatoes with a dollop of aioli for dipping, topped with roasted macadamia nuts.
Water to wash down tablets.
 
1st thing AM, 8.2---Breakfast Mornflake Oats & Lactose free milk. Total 27g carbs. 2 hours later 12.4!!!!

Would have been better off with a full english breakfast and a lot happier.:(:(
Indeed you would @ChrisT2. A couple of eggs cooked any way you like them with bacon (assuming you eat meat) plus mushrooms and a tomato perhaps, makes a nourishing start to the day.

Oats and breakfast cereals OTOH are carbohydrate-heavy, so not a good choice for diabetics.

L: Orkney organic salmon baked with calabrese, chestnut mushrooms, double cream and lemon verbena.

Water to drink.
Skipped pud.

D Seafood salad using tiger prawns, brown shrimps, baby plum tomatoes, celery, Romano peppers, cucumber, Halkidiki olives and salad onions, dressed with an olive oil, balsamic, flat-leaf parsley and garlic vinaigrette, topped with roasted macadamia nuts.
Water to wash down tablets.

First time having white bread (garlic bread) and chicken soup since getting diagnosed just over 2 months ago..

Actually surprised I only spiked to around 9.5 and jumped into my evening cycling/weights for a workout to drop it down fast.

Breakfast was scrambled eggs, lunch a few mixed nuts.
Evening @_Steve_ I never tire of scrambled eggs and love nuts.

We're all different. Some of us get on fine with an occasional treat like garlic bread every once in a while. Unfortunately, bread sends my BG readings soaring, so I take the easy route and avoid bread altogether.

Carrots cut on the diagonal, onions and apple peel sautéed in butter.

Skipped pud.
