Type 2s: What have you eaten today?

Breakfast. 3 scrambled eggs with 1 cup spinach. 3 jalapeno and cheese sausage patties. 1 cup coffee. 6 gram carbs

Lunch. 1 cup coffee. 2 grilled cheese sandwiches. 45 gram carbs.

Dinner. 45gram whole wheat pasta. 100g cooked lean ground beef. 30g shredded cheese. 125ml pasta sauce red pepper. 1 diet cherry coke.

B: 1/3 cup porridge oats made with milk, 2 boiled eggs
L: Baxters roast chicken soup, small banana & mullerlight yogurt. Soon afterwards I started to feel ill and had to come home from work.

Slice of cheese bread & butter so I could take my pills with a cup of tea
 
Brekkie , cheese and livlife x 2
Lunch . Mistakenly had 2 chicken skewers then realised they were sweet chilli also had a Coke Zero .
Dinner . 420gr rib eye steak with 2 eggs
Tea .
Supper . Mature cheddar cheese sandwich with livlife and tea....
About .. 30 grs carb today

Feeling better so just had a ham omelette and a couple of mouthfuls of apple juice.
 
Breakfast = 1/3 cup rolled oats ( Lowan low GI ) + full cream milk
Lunch = 1/2 cup mixed berries, full fat greek yoghurt with cashews + 4 slices salami and cheese
Dinner = ??? Whatever's on the table when I get home

L: Tuna, sweetcorn & mayo on Tesco sunflower & pumpkin seed bread, 12 grapes & a mullerlight yogurt.
T: Spaghetti (wholemeal) bolognese, glass of red vino.

Late lunch: Chicken & ham salad.

D = 400g Rib Eye steak, 6 large mushrooms & 3 grilled tomatoes.
Numerous cup of fresh coffee during the date and a bottle of Merlot to enjoy during the evening.
 
I’m confused this morning. Had a pre dinner reading of 6.7 then had a roast chicken Sunday lunch with veg & few potatoes which I calculated to be 90g of carbs and my post dinner reading was 7.8 which then fell to 4.7 before bed. I was expecting a spike following the high carbs or are they the good carbs

D - Spinach and chicken breasts with spicy pasta sauce.

Tested before bed. 5.2 night everyone

L: Coffee, cheese & red onion chutney butty on wholemeal, coffee.
T: Roast pork, 3 roast potatoes, carrots, broccoli, sprouts, 1 teaspoon apple sauce, 2 Yorkshire puds, 3 glasses vin rouge.

Started feeling better this pm
T: Spanish chicken (left in slow cooker all day) with 3 tbsp basmati rice, coffee
About to have a red bush tea.

B: Raspberries with LF Greek yogurt, 6 pan fried mushrooms & 2 fried eggs. Milky coffee.

L: Home made veg soup, turkey butty on seeded wholemeal, mixed berries & mullerlight yogurt

T: Slow cooked gammon in pineapple juice, 1 slice pineapple & veg bake. Water.
Will have a red bush tea before bed.

B: Seeded wholemeal toast with avocado & 2 poached eggs, milky coffee.

L: Homemade veg soup, leftover gammon, mixed berries & mullerlight yogurt.

T: Scallops on black pudding with crispy bacon, prawns & cauliflower cheese. Cognac & tonic, 3 glasses of red vino.

L: 2 seeded wholemeal toasted with smoked salmon pate, sliced peaches & mullerlight yogurt
T: Chicken, sweet potato & coconut curry with pilau basmati rice. Too much red wine
 

Livlife is linseed oil bread . 5gr carb per slice don’t know if they do it in the states . Brekkie @ 6
Lunch in Work at 12 dinner at home at about 6
Supper about . 9 to 9 30

L: At Chartwell House National Trust cafe - A slice of broccoli & Stilton quiche, salad, potato salad & a tsp chutney. Tea.

T: 2 grilled pork steaks, cauliflower cheese & purple sprouting broccoli followed by rhubarb crumble & pouring cream. 1 glass fizz. (purple sprouting & rhubarb grown by my son)
 
Brekkie: 2 livlife, 4 streaky bacon , 3 slices mature cheddar . 2 black teas
Lunch, Nut mixture , Brazil’s, pecan, walnut
Dinner, roast pork green beans peas carrots gravy
Might have some cheese later on before bed . With some tea
