Hi baruney,i made a cheese sauce last night , i use gram flour 1oz to 1 oz of butter for the roux,cook it out slowly until golden brown then add your milk , works for meStill to experiment on a flour substitute. Is a combination the best way forward for a roux? Not tried as yet.
