Vegetarians: What have you eaten today?

B: ground flax seeds, full fat yogurt, cinnamon
L: celery, cucumber and cube of cheese
D: stir fry veggies, courgette 'noodles' and tofu with garlic and ginger
 
Yesterday
B: soya yoghurt, blueberries, flaked almonds, cinnamon
L: cashew cheese with sliced cucumber and cherry tomatoes
D: Quorn fillets, mushrooms and red pepper in tomato sauce
 
B: soya yoghurt, mixed berries, flaked almonds, cinnamon
L: avocado, spring onions, cherry tomato, chilli flakes
D: caulirice jambalaya (big wok - cauli rice, Tesco jambalaya paste, pepper, mushrooms, spinach, cashews, tofu wiener)

L: jambalaya
D: jambalaya (it was a big cauliflower!)
Snack: peanuts

L: lidl protein roll 'pizza"

L: the last of the jambalaya!
D: Linda Mac sausages on Burgen toast and ketchup
Snack: peanuts, rum and coke

Not the healthiest day, but I had that Friday feeling.

Yesterday:
Brunch: Burgen toast with cashew butter - like peanut butter but higher carb/higher priced. Nice to try though.
Dinner: green bean, mushroom and peanut curry, poppadoms and spicy soya yogurt dip

Today:
Brunch: Burgen toast with cashew butter
Dinner: leftover curry, pudding made from creamed cashews, yogurt, splenda and lime (like a key lime pie without the crust)

we have numerous generations of diabetics in my family, but I am the only one who low carbs and controls my diabetes with diet, so many have poor BG control and complications wish they would try to control their diet but they think they can eat anything and then medicate for it
 
B: scrambled eggs (my breakfast in bed for mothers day - but my young son insisted on joining me and munched peanut butter on toast, making crumbs )

L: cucumber, celery, spoonful of hummus, couple of nuts, cube of cheese (no time for cooked lunch - making a gladiator costume for son - perfectly normal Sunday in our house )

D: celeriac dauphinoise, cauliflower cheese and roasted celeriac (bit white, but it tasted delicious, my yummy meal for Mothers Day )

D: courgetti, mushrooms and pepper in red pesto sauce, flaked almonds. Lime pudding as yesterday
 
I am the only known diabetic in my family. I don't know any real life diabetics either, just you virtual guys to keep me on the straight and narrow x

* sounds boring, but every few days I find a cherry in my berries!

when you said you soacked for ages how long? I find I need to do them for 12-14 hrs I put them in a jar with water. I dont have a fancy mixer
