Vegetarians: What have you eaten today?

Yesterday - 7th January.

B: 2 slices of wholemeal toast with butter.
L: potato & Leek Cupasoup with 2 slices wholemeal toast.(no butter).
D: Mushroom & Ricotta Pasta Parcels (shop bought) with homemade cheese, Celery, Onion sauce.

Later at 8.30pm - 1 Mince pie.
 
B: cheese omelette
L: two mini crustless quiches. Decaf with soya milk
D: savoury almond muffins (roasted shallots, rosemary and Brie) and red wine
 
B: 2 slices of wholemeal toast with butter.
L: Ate out - Pizza topped with: Red Onion, Spinach, Red Pepper, Grated Cheese.
D: 3 slices of wholemeal bread with toasted cheese and sliced mushrooms.
Followed by 1 Mince Pie.
 
B: two savoury brie almond muffins
Out: decaf soya cappuccino, macadamia nuts
D: avocado melt (avocado, walnuts, cheese and quorn pepperoni nuked in the microwave)

Got a chocolate chip almond muffin defrosting for later. Received Hotel Chocolat 70% choc drops for baking with for Christmas. Ideal pressie :hungry:
 
B: full fat NAS yogurt with flax seed
L: celery, raw pepper, tablespoon full fat hummus, small piece cheese
D: mushrooms, cauliflower, green beans, halloumi

will probably have a stick of celery later
 
Early morning 4am: Ate cheese sandwich (woke up hungry).
B: Glass of Grapefruit juice topped up with water.
L: packet of Noodles with stock cube to flavour.
D: Homemade Vegetable Lasagne and Garlic Bread.

At 7pm: Slice of Lemon Drizzle Cake.
 
B oats with almond milk

L small whole meal,roll , humous , olives ,,cucumber

D salad with homemade chips

Later .. Defrosting raspberries will have with melted high % chocolate ..
 
1 cheese on toast
cheese omelette
leak and mushrooms in a cheese sauce on a bed of shredded cabbage
small bowl chocolate ice-cream :)

Today I have mostly been eating cheese :bag:
 
B: Nothing! (BS was already 8.1).
L: 2 slices wholemeal toast with butter & peanut butter spread.
D: Cheese & Onion Pastie with Baked Beans.

Now: Latte with 4 choc chip cookies.
 
Brunch: 3 scrambled eggs and 2 quorn sausages
Dinner: mushroom risotto (made with cauli rice)

First try of this risotto recipe today and I highly recommend it.

Tweaks were:
Subbed parmesan for manchego to make it veggie
Added a blob of philadelphia at the end to make it creamy (instead of the butter)
Squeezed lemon on top to make it extra tasty

I'll definitely give this one a go. As a non-veggie, I do a pretendy-paella with all the chorizo and pork or chicken, and of course the "rice" picks up the colour of the saffron in it, as well as the chorizo oil.

AS - You definitely need to come and live at my house!
 
@AndBreathe I am trying my best to stay out of the kitchen as I could polish off the lot. It is very moreish!

You see, if you were here, I could help finish it more quickly (and as MrB is away, we could have a girl-fest-round the kitchen-table-sort-the-world-out-night.

Hi dawnmc.
Normally within range. But, every 14 days I have an Injection of a Biological Drug - and my blood sugars go erratic for 2/3 days, then they settle again. Liam1955.

L: Mushroom/Cheddar/Garlic Flax Muffin with Butter, a couple of Spinach Puffs & a couple of Brazils
D: Carrot/Cheese/Parsley Salad with Pickled Cabbage, some Cauliflower Tots & a bit of Spicy Almond Bread

Been experimenting with fasting/limited eating window for a few weeks to see what impact it might have on BS. I'm not at all keen to lose weight so I've been having cream in my coffee which I understand even Dr Fung is cool with. All pretty positive so far - current meter average is 4.7 :) (though I suspect an hba1c would be higher as I tend to spike with exercise & have been doing a fair bit of that)
 
Homemade Alpen

Soup Stilton with leeks and cauliflower ...olive bread .. Kept some in the freezer ..

Later .. Ratatouille with small jacket potato ..

Raspberries again .. This will be the same as yesterday ..

I do have a small,box of mini mince pies in the cupboard .. Tempting .. Will see ..
 
B: 1 Banana and small glass Coconut & Mango juice (topped with water).
L: Ate out = 1 Vegetarian Burger with Onions & Cheese in a Bread Bun with Chips.
D: 3 Crumpets & Cheese toasted with homemade Cucumber Chutney.

For later: small individual Custard Tart (shop bought).
 
I have had Kale, mushroom and 1/2 tomato chilli omelette (non cheese).
i cant have too much carbs plays havoc with my Bg

D: courgetti pesto with mushrooms, sun dried tomatoes and manchego. 85% chocolate

I had planned to have leftover risotto tonight. When I suggested to my cauli-phobic child to try some, I didn't think she would and I didn't think she would like it and eat the lot! :wideyed: Proof, if needed, that cauliflower rice doesn't taste of cauliflower.
