D: Pizza & salad

Snack: Scone with jam/clotted cream, completely negating the low carb lunch

Hi AB :) Thanks for thinking of me, but I play for team vegan now so no eggs and butter. I have a pal who made a vegan lemon meringue pie using aquafaba in place of egg whites, but he isn't diabetic so used regular sugar. I think subbing both the eggs and sugar in meringue might be a tweak too far :wacky: I am loving my new way of eating and my hba1c has dropped from 40 to 35 this year since retiring from being a cheese monster.
 
Brunch: peanut butter on toasted Lidl roll
Dinner: same as yesterday but with Cajun spices added to the mince
Extras: golden milk, liquorice tea

I think the 99% chocolate may be an acquired taste! I have been eating 85%, so I'm used to dark chocolate, but I think I do like some sugar.

It was good not caring about the carbs: 10g of chocolate only had 0.8g.

As you probably found with the Hotel Chocolat, there's no point taking things to extremes just because you can.
 
@Ledzeptt The 100% was in a selection box from Santa. I wouldn't have been brave enough to buy it myself. I will stick to their ginger puddles in future. They are awesome.

Just to be different ... and to prove again to my disbelieving self that my T2 has gone into remission .. I had today ...

D Leek and potato pasty .. needless to say home made .. with a fresh salad and coleslaw
S chocolate sponge and cream

highest level 6.1 .. happy days :)
 
Just had a late dessert of my lovely wife's gorgeous plum and chia jam with natural yogurt. OMG! Sometimes being diabetic is sooooo hard
 
In contrast to @Welshman1952 I'm still up messing around on t'internet, eating an unplanned supper, because my BG is too low for some unfathomable reason and I don't want a hypo in the night.

Supper: hot chocolate and oat cakes (my go-to emergency, long lasting carb boost).

It could be worse, but I'm not hungry and I have to be up for work tomorrow.

Yes, diabetes can be hard

B: Muesli. Actimel.

L: Hummus salad sandwich and popcorn

D: Quorn & veg pie, peas, chips and gravy

Snacks: Mixed nuts. Scone & cream.

Anyway, I'm finally off to bed! xx

Enjoy GBBO - I don't think we have much in the way of treats in the cupboard, so I may copy you and go with chocolate :-)

No snacks (yet) - I'm well below my target calorie intake, which is NOT a good thing for me.
 
Same meals as yesterday except for some button mushrooms with dinner and a few pecans for a snack. I was very pleased with the seitan chorizo results yesterday

Currently cooking some wine-***** tomatoes. They better be worth it as the oven will be on for 4 hours!

I'll be interested to learn how the wine-***** tomatoes come out.
They are lovely, thanks, but I think I would turn my oven up a little next time as it was on too low and is a piece of junk. They are soft, sweet and garlicky, but could be more chewy.

Tonight I am grazing on snacky things for dinner.

Lidl toast, lemon hummus, seitan chorizo, ***** tomatoes, olives and peanuts.

Dinner: tried the recipe for Christmas Loaf from the Cauldron website. I think there are a couple of errors in this recipe (too little stock and not enough water for the chia-egg) but it came out well in that it didn't fall to bits and could be easily sliced. But it lacked flavour. To be honest, I didn't faff about with the marmalade part of it - perhaps that would have added flavour. It has potential.
