Vegetarians: What have you eaten today?

@AvocadoSevenfold Is it time to practice Christmas recipes already?

I saw mince pies in Asda for the first time at the weekend (I could almost feel my BG rising as I walked by the aisle).

 
B: Greek yoghurt with almonds, flax seed & blueberries. Actimel.

L: Hummus & carrot sticks. Salad with soya beans and peas.

D: Spaghetti squash with mushrooms & peppers.

Snacks: Eat natural protein bar (basically peanuts). Boursin on crackers.

Not LCHF, but a relatively low carb day for me at 100g rather than my usual 240g'ish.
 
Don't ask me how or why I made a mushroom roast last night without any mushrooms in it as I have no idea myself :confused:

So dinner this evening was mushroomless mushroom roast with a side of garlic mushrooms.

Got chocolate for Bake Off later.

B: Muesli. Actimel.

L: Hummus salad sandwich. Mini cheddars.

D: Felafel, chips & peas.

GBBO treat: Chocolate oat cakes.
 
Flax seed and almond milk with oats .. soaked over night with a quick ping in the microwave in the mornings ..

Lovelife bread roll with cheese and little tomatoes

Cauliflower cheese with roast carrots parsnip and one potato

Snack I have finished my chocolate fridge cake :(

But I have some fruit compot to eat .. with the new alpro coconut ice cream , reduced sugar one .. this is coconut but other flavours , I have just seen in tescos :)

L .. coleslaw cheddars cucumber cheese
D ... Full roast !!!!!!!! Roast potatoes, roast parsnips, sage and onion stuffing, yorkshire pudding, collie flower, broccoli & home grown runner beans, topped with home made onion gravy ...

tested 2hrs after my roast diner and it was 6.8 .... I still cannot believe this remission thing .. its wonderful :)
Supper will be cherry pie and cream ..

B oats flaxseed and almond milk .. unsweetened ..

L cheese on toast .. two slices .. lovely seed bread

Super will be aubergine and chick peas, take away but home made from the freeze .. might have pittas bread wholemeal ..

Later snack will be fruit compot , ice cream alpro one , and fridge cake , I made another one :)
 
B muesli with about 3 fresh strawberries
L split pea soup
D Homemade veggie burgers with sweet potato fries and salad. (The fries are simply out of this world - full of flavour and deliciously crisp)

.. and later I am going to force myself to have a portion of my wife's homemade natural yogurt. Sometimes life is just so plain hard ... but someone has to do it!!

.... and just checked my BGs after those amazing fries. It was 4.5 before and after 1.5 hours it was only 4.7!!! I think I might live off these little babies!!!!!
 
Hello @Kat100 what is fridge cake? And please could you tell me where I might find the recipe. :)
This is mine , I adapted it . To suit me :)
You need a baking tray or dish lined with greeceproof ..

Here is what I do ,. But you can always adapt ingredients

One bar 85% Lindt 100g

Three table spoons of pure virgin coconut oil

Melt the two, for one min in the microwave ..

Then add three table spoons of no added sugar peanut butter ..
Stir in , it melts ..

I then add unsweetened shredded coconut ..just a few , depending on taste about one table spoon ..
Sometimes some crushed nuts a few dates, chopped maybe


Drop of vanilla essence .. bit of cinimon ...

No weighing needed .. pour mixture into dish put in fridge and leave for a good three hours ..
Always tastes better the second day of making ...

still cannot quite believe it ... my pallet has changed so much .. I used to love pasta .. now I cannot stand the stuff ..
I am truly delighted for you @Enclave

.. I hardly touch pasta , I never liked it much .. but sill have a small potion now and then ..
Rice and potatoes same .. hardly any or just small portion .. sweet potatoes I love ..
I make the cauliflower rice once a week .. but I did this years ago as a spicy side dish .. I make it spicy ..

I do my own diet , swaps and changes .. I can't follow one diet all the time ..
after having a very serious operation some years ago I kept gaining weight ... with other problems .. it was odd ..!
Now four years of being diagnosed ... I am the same weight as I was in my late thirties ..
It took over twenty years to get a diagnoses .. because lots of symptoms were being looked at ..
so many have stories of ill health that then trigger the diabetes ..
but again well done .. Kat x
 
#purplearmadillo I loved this question because I've wanted to eat more vegetarian and vegan diet now. I always have people wanting to feed me meat because I am often see eating small amounts and they are concern for my protein. And they don't believe I have complete proteins, but I didn't think your body needs a lot of eggs or cheese or meat. I just have to over season meat and eggs have to have veggies in them. Why is it veggies don't need more than salt, pepper, and garlic to taste amazing but meat needs a ton of spices for me. Put I never heard of anyone dying or being over weight from a vegan diet. I think when I finish school I want to go vegetarian with many vegan meals. I don't have the self control to be vegan but I admire those who do it 100%. I just don't buy enough of my food and can't afford to, so I have to eat what is in front of me and eat double sides and smallest meat. Anyway keep up the great work cus I believe vegan and vegetarian lifestyle is the answer to my diabetes. I see the numbers.
 
Breakfast ... none very unusual .. but bloods and flu jab took over

So lunch early .. cheese on toast ... Apple ...

Snack .. chunk of fridge cake

Super will be soon :) and is from my freezer a homemade .. butternut squash , blackeyed bean and sweet potato stew ..
Served with turmeric and cauliflower rice ..with ginger and garlic roasted ..

Laters will be .. fruit compot , apple , blackberry , rhubarb , served with alpro icecream .. :)
