I can only say that it shouldn't, but I do eat cucumber and I have normal blood glucose - so I cannot swear to there being no correlation.
What I can assure you about is that it isn't magic. Cucumber is a low carb fruit (yes, fruit) and they are a good sensible choice to eat. Excluding high carb foods is the real key to lower blood glucose, at least for an uncomplicated type 2 it is. It might be beneficial for many people diabetic or not.

I've always eaten cucumbers, and since my T2 diagnosis over 10 years ago they've remained part of my current low carb diet. However, I'm not aware of any specific benefits in eating them and for me they are basically one of many foods that help keep my glucose levels under control.

Hi @bobweir45

Looks like the end of your post has got mixed up with the title. Would you like a moderator to edit your title to something like "Cucumbers and blood sugar levels?"
(Also, it might help if you said what kind of diabetes you had. )

But my understanding is that cucumbers are low in carbohydrate so they are a healthy diabetic snack.

Hi does anyone know if taking cucumbers is really benefits in controlling blood sugar le
You can eat them without spikes when T2, but the same goes for a steak, or some salad, or.... So incorporated in a low carb diet, yeah, they're fine. But they're not a magic bullet for any type of diabetes.
