"What have you eaten" Parallel Chat

Hello all! I have another "cold" of some sort - I think maybe caught at the pub lunch last week. Sore neck, sneezing, hot and cold, very fatigued (hence yesterday's frequent rests needed and sleeping until 11am today) and lower appetite (not too displeased about that of course!)

@Annb I hate it when gadgets I've forked out decent money for break or fail. Hope it's still in warranty.

@Antje77 brilliant news about the car, and glad you got to have fun with the scooter! How lovely to remember your mum like that, for mine I go to a garden centre and buy a plant for her, have coffee and cake and remember all the good times we had doing just that. I was always very warmed by Goonergal's lovely demeanour on the forums, but didn't know her very well - she passed while I was not visiting here for a couple of years and I am so sorry to hear that.

@MrsA2 so sorry to hear about the migraine, I don't suffer with them myself but I know from a close friend how debilitating they are.

@shelley262 the pickled eggs are lovely! I prefer ACV because other vinegars are too astringent for my taste, ACV is gentler.

Breakfast 1pm
2 Apple Cider Vinegar pickled eggs
Coffee with cream
Glass kefir

Second breakfast !! or lunch maybe 2.30pm - looks like the decreased appetite is over!
4 ryvita with butter
2 slices bacon
2 softboiled eggs

Then fell prey to some ordinary chocolate, rather more than is good for me. Probably the result of feeling a bit sorry for myself with the cold!

Not sure about tea yet, I know I should have a plan but I don't today. Might have a couple of small chicken thighs, or just some Greek yogurt with cream. Or both if I'm hungry!
 
I'm not going to attempt to fill in my diary this time. I'm just too far behind. I could do it, but it would just read like the thing I hate - a meal list! I'll do a few highlights of the past month, though.

We've had friends over from Australia, I've still been tutoring grandson in multiple subjects (and preparing him for assessments), the house has suffered as a result. We also took advantage of the occasional breaks in the weather to get the garden planted for summer.

Anyway, things have progressed. Friends have returned to Australia, son, having passed his driving test got a car and is now taking up some of the "taxi" strain, grandson got 88% in his maths assessment and is now back in school full-time (although he still wants me tutoring him to stay ahead).

We had some lovely meals out with the Aussie friends. Two were very memorable. First one in Cafe Andaluz - a tapas restaurant. Some excellent tapas dishes. A baked goats cheese with an orange and chilli dressing. I've since adapted that one to make at home using low sugar marmalade and chilli. Another delicious one (which I've also adapted) was chicken strips in batter with a honey/soy dressing. I've found a low carb batter recipe (on my CMT) and the dressing I make with Skinny Food co "honey" and tamari soy. Other dishes were scallops with chorizo and black pudding, pork skewers, pil pil prawns, crispy haddock with alioli...lots of wine!

Second standout was a Thai in Edinburgh. Fabulous location and food. The place is so gorgeous, our Aussie friends even came back to get their phone to photograph the restaurant (and the toilets!). Stunning views over Edinburgh Castle. It was a bit grey when I took that photo. In the starters were Thai tacos - amazing! The thinnest dough ever with a filling of Thai red chicken curry, pork skewers, the best squid I've ever tasted, amazing chicken and cashews (I don't eat cashews) and they even did me cauliflower rice!

Less of a success was the pub we always went to when we go to the theatre. We went to see the Drifters story (which was enjoyable) but our pub had changed their menu and I struggled to find anything to eat. Resorted to the good old standby of steak and salad but it was very chewy.

I'm back at my Aqua now too (legs really needed it).
 
An assortment of some of my meals last month. Ostrich cheese burgers and salad, prawn salad, crispy chicken escalope with fried rice and a cobette, low carb pasta carbonara, and Skinny hot dogs with a home made tomato & pepper ragu and a melted cheese.

A few more of my dinners in May. My version of tge goats cheese from Cafe Andaluz (made lower carb) with salad. Another Cafe Andaluz home version - the honey/soy chicken with cauliflower fried rice to make a meal. Next peri peri rubbed pork ribs, another prawn salad. The next two I've developed a bit of a mania for. SRSLY Mediterranean wraps warmed slightly and topped with various combinations. One is peri peri chicken breast, salad and alioli, the other a Caribbean style chicken with coconut, peppers, hot sauce, alioli. I've had these a few times in multiple different combos.
 
Glad you had a great time with your Aussie friends and congratulations to your grandson (and to you for the tutoring!) on the brilliant success with maths.
 
Pleased eggs in ACV taste good. Sorry to hear about your bug though great you are seeing the positives 're appetite suppression.
 
Wow what a lovely account of family successes and those meal photos are all winners too. You get a particularly large part on the back from me for grandsons tutoring results - pleased too it's led to him being more confident and getting back into school full time.

Just been following the story of Michael Moseley who it seems has been missing since yesterday lunch time on the Greek island of Symi. Hope he's found safe and well.
 
And a bit of fun in the midst of May. Youngest grandson had his 11th birthday. I ordered Jelly Bellies from Moonpig along with his card. Unfortunately, so did some grandkids for their Papa!

He got his Jelly bellies with the Papa card and somewhere a Papa has a Pokemon card wishing him a happy 11th birthday. They both got their Jelly bellies though. View attachment 68127View attachment 68126View attachment 68125
 
@shelley262 here's a pic of my second try at kimchi. I use one cabbage leaf inside to keep the veg submerged, then a second as the "loosely covered". I find it works well

A busy day with lots of errands achieved.
Food was
11am cold salmon, prawns and half avocado . 1 lc mini millionaire
2pm 2 hard boiled eggs 1 lc mini millionaire
6pm chicken shwarma with broccoli and cabbage. 1 lc mini millionaire. A sort of shake with yoghurt, cream and cocoa (was supposed to thicken but it didn't)

Its only when I write it down i realise that maybe making those mini millionaires was just too tempting...
 
One fried egg on top of a toasted crumpet. Took the amount of insulin that I would take with a slice of toast. Then went to get my legs rebandaged. In the car my alarm went off and BG had dropped to 3.9. Took a couple of fruit pastilles - would normally work, but it didn't. After my legs were done and I was waiting for Neil to collect me, I checked and it was 3.2. Had 2 of my emergency supply of oatcakes - didn't budge and I started to shake so I took the last one. Just about to ask gthe receptionist for some help when Neil arrived. In the car I had some more ffruit pastilles (my alternative emergency supply). Came up to 4.1 by gthe time we got home and then 5.5. Had a cup of tea, with milk and it dropped again to 4.2. Had a low carb wrap with melted cheese in it. Followed with a slice of watermelon. Up to 5.1. Relatively stable now but food seems to have caused a sore stomach. Can't win.
 
Hi all,hope all doing well. Week has flown by again. For those of you that like the Olinas crackers,can highly recommend the recipe on the Freshwell site,used random bits and bobs of seeds that I had already in.
They don’t look pretty but taste great and 0.5g carbs per cracker.
Lovely day out in Nottingham yesterday to see the Pet Shop boys. Lunch at a Greek restaurant. Chicken souvlaki and Tzatziki,Greek salad and a tsp of hubby’s lemon cheesecake-too sweet
