That looks wonderful and I love the sound of smeerkaas.

I don't think smeerkaas is a thing in the UK. It's like a cold melted cheese. Cheap, and a staple especially for people with children that need sandwiches for school. Pretty tasty too, especially now they sell different types, unlike when I was a child.
Pretty much comfort food, but also the thing to use for the best leek soup, no risk of separating like you have with grated cheese, and at least as much flavour for much less money. :)

I don't plan on visiting the UK any time soon (I wish!) so I can't bring you any, but happy to send you some smeerkaas by mail! It keeps forever in the fridge if unopened. :)
I'm seriously impressed by your new years cold swim what a brilliant way to start 2025. I went on a walk with coat, gloves and hat and the wind was bitter - so the thought of taking warm clothes off and getting into cold water is seriously daunting.
It's a Dutch tradition. There are many organised New Years dips around the country, where everyone wears the same orange beanies promoting a brand of smoked sausage and lifeguards are standing by and everything. This year many of them, especially the ones in the sea were cancelled due to the weather.
Our own dip was an informal one, just people from our street.

I swim multiple times a week so today wasn't that different from yesterday, except for the jumping in together on the count of three to make for a good picture for our local newspaper. :hilarious:
I don't jump in usually but go slow, this worked fine as well!
 
I'm going for a lucky dip into a different type of freezer, 1st of January traditionally is the day that crazy Dutchies have a swim. I can't stay behind of course so I'll see how many of my neighbours dare to go in with this storm. The wind is about 9 Bft with the occasional gust over 100 km/h with a nasty rain as well. :hilarious:
Only 4 people there for the Looney Dook on the beach yesterday. My niece was one! Weather was horrible.
 
28 December - we reached the point of being fed up with a full meal. I'd gone in search of a ham for tomorrow.

B. TAG and Benecol dairy free

L. Sandwich with ham and mustard on SRSLY bread.

D. I found the most amazing mushroom and black truffle soup in M&S. It's in the M&S Collection and it is the best bought soup that I've ever tasted. £4 for the glass jar but it's 2 servings with a dash of cream to thin it. Carb and sugar count is fine. I had half the jar with a dash of cream and 2 slices of SRSLY bread. They have more of these soups but the carb/sugar count is higher.

Another LC creme brulee with an inulin topping.

29 December

B. TAG and Benecol dairy free.

L. The other half of the mushroom and black truffle soup.

D. Baked ham with carrot and swede mash. Campari and soda. Yet another LC creme brulee.

No swimming today so I was able to stay put indoors.

30 December

B. TAG and Benecol dairy free

L. Nothing - busy making stovies. I did 2 batches. Traditional for Hubby with potato, onion, corned beef, and GF sausages. Adapted for me with celeriac slices substituted for the potato. It worked well.

31 December

A very quick trip to M&S to get more of that soup and I also got the mini scallops and prawn thermidor from their party food nibbles.

B. Just TAG as I wanted the trip to M&S to be quick.

L. Sandwich with egg mayo on SRSLY bread.

D. Chicken breast in a mushroom sauce with the remains of the stovies. 2 vodkas and diet coke much later.

Smoked salmon on more RyVita for a late breakfast (about 1 pm)

2nd meal is just about ready. It is h/m sausage with lots of bits and pieces of vegetables. The lucky dip from the freezer turned out to be a packet of this h/m sausage. Actually chorizo. No idea why I labelled it sausage. A bit spicy to have too much but it's fine mixed with a lot of veggies.

Wish I could get celeriac here. The shops just don't stock it any more, nor do they have fennel, which I also want to cook with.

1January

Was going to visit SIL and all her family from Australia and Manchester, but weather was atrocious and most of them are recovering from a bug. Staying in was the best choice.

B. TAG and Benecol dairy free

L. Split some of the M&S prawn thermidors and scallops with Hubby.

D. Split the remainder of the M&S nibbles followed by a DGF Christmas pudding and a spoonful of extra thick cream.

2 January

Finally got to visit SIL and family. Nice catch up.

B just TAG. I'd run out of Benecol dairy free.

L. I tried another of the M&S Collection soups, Butternut Squash and sage. Higher carb and sugar count but I'll make sure I keep the rest of the day low. Added a dash of cream as, like the mushroom version, it is very thick. This is just as glorious as the mushroom version.

D. Veal escalope and assorted greens (kale, broccoli, peas, cavolo nero).

The other three soups are Lobster Bisque (doable with control the rest of the day), Italian tomato & basil (a bit too high at 19 7g carbs per portion), finally French Onion (another doable with care the rest of the day.)

Bit of a rush this morning - my appointment was earlier today than usual, and, of course, the car was iced over so Neil had to spend some time scraping and brushing. So no breakfast until we got back about 11 am. then I just decided to have some RyVita with Tartex.

Currently making some chorizo balls in beef gravy - that'll do for my 2nd meal. Feeling peckish but not really hungry.

2nd , can't remember daytime but evening we went to a show in London. Quick tapas first but the restaurant hadn't had its delivery so limited menu. Sweet potato fries, mushrooms, 4 meatballs (between 3 of us!) and mussels with chorizo. They did give us a free bottle of wine .

Today I have been steadfastly eating my way though all the sweets, biscuits and cake left. Not a huge amount but too much for my weight and my bg.

Normality returns tomorrow as guest goes and rest of food gets given away.

Bacon sandwiches and drip fed cheeses, plural, not just one cheese, sounds like an awesome start to the year.
 
Yesterday I had Steve over for a second date. I had made onion soup the day before, it's always better on the second day and it saved me from having to cook while having a guest. We had it with lots of grated cheese, and bread (white rolls for him, LC toast for me) with garlic butter. And lots of beer and other drinks, staing up until 5 am, playing and listening to music. He had brought his own guitar this time, so we did some playing together as well. :)
BG behaved perfectly, never going over 6.4 and waking up in the low 4's with a straight line!

I went for a swim while Steve had a coffee. Temperatures have dropped, so the water temperature was only just above 2 °C, three days ago it was almost 6 °C!
Still, very nice swim to wake up. :joyful:

(Yes, that's a dinner plate in the picture, and not a small one.)

I never even cook chicken legs, let alone turkey legs...
So please tell me how to make the tastiest turkey leg, I have no idea.

How about this?

Roast turkey leg​


  • Rub the turkey leg with olive oil and sprinkle with a mixture of herbs, eg:
  • dried oregano
  • dried parsley
  • garlic powder
  • sweet paprika
  • cayenne
  • salt
  • ground pepper
  • lemon zest
or other herbs of your choice – better use dried herbs for roasting - fresh ones burn too easily.

  • Slices lemon - without the zest, if you have already used it in the mix
  • Preheat the oven to 180C (350F). Line a roasting tin with baking paper or foil
  • Spread slices of onion, a sprig or two of rosemary and lemon slices over it.
  • Place the turkey leg on top, skin side down and roast for 30 minutes.
  • Turn the leg over, skin side up, and cook for another 40 minutes or until the internal temperature is 75°C (167°F), if you have a thermometer or until a sharp point makes a clear liquid run out.
  • Rest the turkey, loosely covered with foil, for 20-30 minutes. Slice and serve
  • If a leg is too much, leftovers will keep for a few days in a fridge and can be used for sandwiches, curry or other stew, or part of a salad.
Would normally be served with roasted veg, including potatoes but can be had with other veggie side dishes eg broccoli, cauliflower, Brussels sprouts and so on
 
A welcome return to routine.
Early yoga meant a fast until lunchtime (except for cwc)
L: 2 slices livlife toast with grilled cheeses. Handful dark chocolate coated almonds.
Decorations down.
D: handful olives, stilton, keto crackers (received as Xmas present) will post details when I've checked bg. Small slice hubbies pizza. Hm lc tiramisu (made using just 4 sponge fingers, cream and yoghurt to give 4 portions). Glass white wine with soda water. Later a rum.

Have a sprinkling of snow but as tomorrow's temperature is due to be 10° I suspect it won't last.

I more or less followed your recipe and added lots of garlic, including some under the skin of the turkey because my aunt said so. No roasting tin big enough so hopefully a glass casserole works as well. I also forgot to use the baking paper but I suppose that just serves to make cleaning up more easy, so this is a problem for later. :hilarious:

It wouldn't need to be olive oil - that's just the oil that I usually have in the house. Butter might burn but if you keep your eyes on it, you could only cover it when it's looking too dark, Alternative is to cover with foil and take it off for the last 10-15 minutes to brown the skin a bit more.
 
Rainy day, so quiet
B: yoghurt seeds and raspberries
L: keto crackers, cheese and olives. A cc little chocolate pot
D: chicken thighs cooked in air fryer. Wrapped each around a chipolata then in a foil parcel. Opened foil for last few minutes. Very tasty. Sprouts and carrots and swede. Hm lc tiramisu. Glass white wine.

Good bg all day. Body is liking being back to normal.

In my excitement about preparing a large piece of meat in the oven for the first time in my life (roasts aren't much a thing in the Netherlands) I completely forgot I'd wanted to cook some veggies to go with it. :hilarious:
Didn't matter, I simply used my carnivore plate and had the onions from the bottom and half a head of garlic with it, not complaining and I'll be safe from vampires tonight.

There's at least enough meat left for two more days so I'll likely do something with veggies tomorrow.
