Breakfast was some of the hm lc granola bars I made. They are too moreish, and seem to be causing digestive issues so I will eat thr last of them tomorrow and not make them again.
Session 2 of my Taking Control of predabetes course. Did very well to keep my mouth shut as entirely on the Eatwell plate. Got really irate when she was telling an 85 year old woman to not have ham in her sandwiches! And encouraging everyone to have 30g dried fruits everyday

Did a bit of clothes shopping after and, true to form for me, becuase I'd been told NOT to eat cakes etc I bought a mini millionaire bar. Luckily it was so sweet I threw half of it away. Wish I knew why I did this? (Eat what I'm told not to)?

Mid afternoon, back home, some cold steak and olives

D: more cold steak (aka lovely cold roast beef) and olives. 6 dark chocolate almonds and the last glass of Prosecco.

Off on travels tomorrow. Fridge now truly empty and nuts and snacks for the journey packed. Google says 6 hours eek!

And I have to go for my annual bloods first. Dreading the ldl and hba1c

Breakfast was the beef ragout that I made yesterday. I didn't eat it yesterday though. I completely lost track of time due to various people coming in unexpectedly and didn't get around to making my meal until about 7.30 pm - too late to cook the ragout so I just took enough of the mince to make a couple of burgers and had that, then put the ragout on and cooked it for about 3 hours. It's very good for breakfast. The remainder will go into the freezer with the soup that I made yesterday.

2nd meal will be a kind of "green stew". Kind of like the French way of cooking peas with onions and lettuce but will use up some rocket leaves and some kohl rabi leaves and stems instead of lettuce. Frozen peas are very useful for this kind of dish, but I'm going to have to use frozen onions as well - I used my last onion on the ragout.

EDIT: I shouldn't have put the kohl rabi stems in. Despite the long cooking, they were still tough. Well, I'll know next time. I think I'll put the remaining stew through the blender and then strain out all the tough bits. Took some frozen spicy chicken drumsticks out of the freezer for tomorrow. We've reached the stage of no more space in the freezer, again.
I’ve planted kohlrabi seeds this year for the first time. Is stewing your regular way of cooking it? I thought, based on the appearance, crazy as that is, that I’d be able to treat it like radish and eat it raw or roasted?

I was just using it as an extra vegetable in the stew because, at the moment, vegetables are in short supply in our shops. It works well for those times you would use a turnip. Of course, you can use it as a salad vegetable and you can roast it. Very versatile vegetable, the kohlrabi. I've never tried to grow them though. Probably no point - I'm useless at gardening both indoors and out.

Thank you. The seeds germinated well indoors and Ive now transplanted them into the garden. We’ll see how they do.I work on the theory if I start enough seeds something will have a good year even if there are inevitable failures too.

Breakfast was RyVita with ham and cheese.

I was going to a pot-luck event in the afternoon so I decided to try again with the resistant carbs. Last night I made some coconut rice (basmati with coconut milk) and turned that into vegetable biryani. I took that with me and had a small portion - just of that, I couldn't trust anything else there. It wasn't a success. Despite insulin BG went pretty high. Everyone else enjoyed it though, so that's one good thing to come out of the experiment. Even the children scoffed the brownies that I made. Usually they just eat the icing off the top of cakes but these went straight down. Quite pleased at their success.

Em and her schoolfriend came in (Em cleans my floors for me once a week and this week her friend was coming to stay for the weekend) so they had some of the brownies as well and they enjoyed them too. Dark chocolate balanced out the amount of sugar in them.

By the time I got home, I was hungry again and had some more RyVita, this time with cottage cheese.

Breakfast was 3 large strawberries which I had intended to have with cream, and had cut them into manageable chunks, then found I had no cream in the fridge. Followed by some RyVita with cheese.

2nd meal will be chicken drumsticks with salad. Hoping to find a suitable barbecue sauce recipe, since I seem to have lost mine and I'm not feeling very inventive today. Too tired after lots of effort yesterday.

EDIT: no use - they all use sweeteners instead of sugar (all sweeteners are worse for me than sugar) so I'll have to come up with something myself or just not have barbecue sauce with the chicken.

FURTHER EDIT: I hadn't realised that I had no passata in the cupboard - very unusual for me - so no chance of making anything like a proper barbecue sauce. Ended up making a mixture of tomato puree, lemon juice, olive oil and a touch of date syrup, to brush on the chicken. No spices because I didn't think they would go with the mixture. Tasted very good, if I do say so myself. Quite a lot left so will have to use it on other meats or fish, before it goes off.

Bacon and egg for breakfast. Haven't had that in a while.

2nd meal will be steak and onions. Lots of protein today - much easier than prepping vegetables, other than onions, of course.

EDIT: I did prep some veg after all. There were some pieces of cauliflower and broccoli left, plus some tomatoes and some defrosted onions and peas - all sitting in the fridge accusingly. So I chucked them all into a baking tray with some lemon and some butter, covered with foil and they are now in the oven. The oven had to go on anyway to bake off some protein bars I'd put through the processor (I may have put too many dates into the mix, but we shall see how they turn out).

Broke my fast a couple of hours ago with a cup of tea and a protein/nutty bar. I was just going to make it OMAD but needed something because my BG was dropping too far.

Main meal will be stewed beef and vegetables - currently on the stove and pretty well ready to go when I want it. BG just dropped again to 3.7, so I'd better have that now, I suppose.

I'll have to keep an eye on what I am drinking. I keep getting caught up in things that I'm trying to do online and forgetting everything else, so end up not having enough fluid, or forgetting my pills (which I've done today - too late to take them now probably).

Breakfast today was beef stew. Still some left for another meal but not today - too many vegetables for one thing!

At least I have remembered to take my pills and have had 4 cups of tea so far.

2nd meal: more RyVita with ham. Plus another cup of tea.

My friend's eldest son, who was married in Macao in March, is bringing his new wife home to the Island next month to meet his friends here. They are going to have a party for everyone to make up for their wedding and reception being in China. Cakes and savouries will be required. Starting to think about what would be suitable. It will have to be things that can keep for a few days in fridge or freezer in order to do all the cooking/baking that will be required. Now, where did I put my thinking cap?

RyVita and Ham again today - just lazy thinking is all. I was up in the "middle of the night" for an international Zoom meeting so was feeling a bit dozy and used as little effort as possible.

Still avoiding vegetables today so may just have something like egg mayo for some sort of a meal later on.

I've had a few ideas for the upcoming "wedding party" - some of the guests will be vegan and I've dug out a couple of potential recipes for them and for vegetarians. Might also make salmon en croute for the non-vegetarians. I also have a recipe for "Shirazi salad" which involves pomegranate seeds and I rather like the idea of that, although I don't like pomegranate myself. I'm not the only cook preparing dishes so I'll leave the savouries at three of those and think a bit longer about desserts/cakes.
