Sorry to hear about your bleed - it's hard but changes in health can help motivate changes which are difficult to make. I think it's a really good idea to replace Bailey's with a straight spirit and double cream. If you find you need it a bit sweeter you could add a tiny bit of sweetener - although cream adds a fair bit of sweetness.Morning all. I've had my grandson staying with me all week so haven't been able to get on my laptop. Now he's gone to stay with his cousin for a couple of days and then he's going to the Czch Republic till after Christmas. I got a bit of a shock a week ago. I had the Retinopathy camera and it showed a bleed which I was told was caused by glucose so since then, I've cut everything naughty out and am counting the carbs I take in. That was the kick I needed so I'm back on the wagon and don't intend to fall off. Christmas is coming and it will be difficult but I really intend to stick it out. My daughter died from Diabetes Mellitus so that is never far from my thoughts. My one treat is 20 ml of Baileys in my coffee every morning but when the bottle is finished, I will replace it with cream and whisky! no sugar in that. There are 4-5g of carbs in 20ml so it isn't too bad tho it can be improved. Have a good day all.![]()

I used to do a cheese and lentil loaf that was easy. Can be made impressive/festive with a line of red peppers through the middle. If this sounds suitable let me know and I'll try find the recipeMinestrone for breakfast
2nd meal will be steak with a fried egg on top and some fried onions to keep it company.
I've been looking on the internet for some ideas for a vegetarian Christmas main course. Alistair tells me he doesn't much bother with making anything for himself. Doesn't like the things everyone else wants (mainly pigs in blankets and turkey) so just has a few veg. He's also cutting down on fats due to his stomach issues. I suggested a nut roast, but he refuted that suggestion very rapidly. He cooks the Christmas meal for everyone else though, so I thought I'd make something special for him. I've found a few recipes, so I'll have to see if I can get the ingredients for them here.

Cook 200g red lentils in water with either stock cube or good seasoning of your choice. When soft drain well.That sounds like a very good idea. Thanks very much, I'd be grateful if you do have the recipe to hand.

Soften a finely chopped onion in oil or butter (and a grated carrot if you have one, I often dont)
Mix the lentils and onion with 100g grated cheddar and 1beaten egg.
Put in a well greased loaf tin or dish. Bake for 30-40 minutes at 180° fan (gm5). Might need to cover with foil if it gets too brown.
You can add a layer of cooked mushrooms or red peppers or even stuffing to make it look festive.
It also tastes great cold the next day. Or fried in a little butter.
Can vary it by adding herbs or spices seasonings of your choice. Or varying cheeses.

He was mostly recovered a day later thankfully. Now he's driving me crazy wrapping Christmas Gifts, but not labelling them!! It's like a Christmas mystery game for me!Well done on getting your own way with the energy company. Very determined lady you are. Also very well organised with all you have to do and getting your shopping organised as well. Hugs for Hubby not feeling well and for you having to work around it. Here's hoping he's better soon.
