"What have you eaten" Parallel Chat

Oh, and I meant to ask because @AndBreathe mentioned them in another thread (https://www.diabetes.co.uk/forum/threads/gram-flour.208365/#post-2750469), does anyone ever make onion bhajis? I've never had one in my life but they look and sound amazing.
And they are made with gram flower. I've never had that before either, but hummus is an odd one with my diabetes, it needs much less insulin than you'd expect from the carb count. So maybe other things made from chick peas work well too, worth a try!

So before I use google to find a random recipe, would you be so kind to share favourite recipes? I'd rather have a go with a recipe others already use and like.

@Rokaab , do you make them yourself? I want to make those really awesome ones!
I don't have a recipe but have favourite memory of going to a party in London, probably late 1970s, where the only food was a huge bowl of raw bhaji mix. When you wanted soem you put a spoonful into a pan of boiling oil that was on the cooker. Best bhaji I've ever tasted, but oh the health and safety issues when I look back, and at the amount of alcohol and other substances involved. How did we survive? :nailbiting:

L: stilton cheese with lettuce and cucumber. Ff greek with chopppecans and chocolate
Hospital for the biopsy on my nose. Surprisingly quick. In and out in 12 minutes! 1 dissolvable stich and minimal discomfort since.
D: cauliflower cheese with bacon, with roasted spicy cauliflower on the side. (Yes were running out of veg. Shopping day tomorrow). 1 hm lc chocolate ice cream lolly.
1 Scotch.

Hubbys turn for hospital appointment tomorrow. We are spending far too much time there as healthy people these days. Tests and more tests.

Here's the recipe I used to use - haven't made them for quite a while now, but I must.

Ingredients
It makes quite a lot - I used to make them for the family so you could reduce the quantities.

2 onions finely sliced
100g gram flour
½ tsp baking powder
½ tsp chilli powder
½ tsp turmeric
1 green chilli deseeded and very finely chopped
vegetable oil for frying

Soak the onion in cold water while you make the base mix. Sift the flour and baking powder into a bowl, then add the chilli powder, turmeric, chopped chilli and a good sprinkling of salt. Mix in about 100ml of cold water to make a thick batter – add a splash more if it feels too stiff.

Drain the onion well and mix it into the batter. Heat oil in a wok or deep pan. Do not fill the pan more than a third full. Add a tiny speck of batter. If it rises to the surface surrounded by bubbles and starts to brown, then the oil is hot enough for frying.

Lower heaped tbsps of the bhaji mixture into the pan, a few at a time, and cook for a few mins, turning once, until they are evenly browned and crisp (about 3-4 minutes). Drain on kitchen paper, sprinkle with a little salt and keep warm while you cook the rest.


These are good with Raita

Raita recipe:

½ cucumber
About 200 g Greek-style yogurt
2 tbsp chopped mint (optional)


Peel the cucumber and grate it into a sieve set over a bowl or chop it finely for a rougher texture

Mix the yoghurt and mint with some seasoning

Squeeze out any extra moisture from the cucumber with your hands

Mix cucumber into the yoghurt mixture

Serve with the bhajis

This sounds exactly like my kind of party, and I wouldn't think twice on attending tomorrow!
I have my birthday coming up, maybe I'll even steal this idea, I'm sure I can borrow an electric deep frying thing and put in in the garden next to the fire and a bhaji mix. And the beer, wine, whisky, etc. :joyful:

The chilli will likely be a red one with the seeds left in instead of a green one, I like a bit of a kick and green ones are hard to find but I don't expect this will hurt the recipe.

Red won't do any harm at all. In fact, it would make it more colourful and maybe a bit hotter.

Today I went out for dinner with a friend. :)
An Afghan resturant where I had a very good meal of large shrimp in a spicy tomato sauce, salad, I had a little of the rice and bread, and n Afghan yoghurt and cucumber drink. My friend had the vegetarian curries, which I had a taste from as well. :hungry:

I went for a quick dip this afternoon (no swim because the ice was too thick).
Good thing I went in at the same spot yesterday, I could only get through the ice where I had already broken it yesterday. I had a try with the older ice but I couldn't break it.
I must have looked very funny: middle aged fat naked woman with black socks and gloves stomping on the ice until the hole was big enough to go in. :hilarious: I don't think anybody saw me though.

I was torn between emojis, laughing or winner. I do enjoy hearing of your adventures.
 
Breakfast was 2 slices of RyVita with cheese melted onto them and a slice of ham sandwiched between them. Not very exciting but it wasn't too awful.

2nd meal will be turkey mince which Neil bought today, right on its use-by date. I'll make a ragout with it and have some of it with some chickpea rice. The rest should freeze to have with some vegetables or lentil pasta later in the week, or month.

No yoghurt available to make raita, but I might make some bhajis tomorrow for breakfast and have with some chutney or piccalilli. I'll slice the onions tonight and leave them in the fridge to be used tomorrow.

It's much warmer today so the ice is starting to melt. I still had to break it to get in though, but I expect tomorrow I can swim again instead of just dipping in the hole I made. :)
The wet ice made for a stunning reflection of the trees!

Today I worked on adjusting my duvet cover, which should have been finished days ago but I'm simply too good at procrastinating. Almost done!
Also some panicky cleaning, date Hans will be visiting tomorrow. :)
The cleaning will have to be finished tomorrow morning, I'm about to go to the film with a friend. "A Complete Unknown", about Bob Dylan, I heard good things about it so very much looking forward to it!

Early start today to take hubby for his heart test. We were done and back home by 09:15!

Social coffee with friends. They were all on cakes and scones but I had 2 poached eggs on toast (which I left).

Just catching up on posts, now I really fancy an onion bhaji! Definitely do not want to go ice swimming :D Hope all doing well. Just had a very minor breast lump scare. Seen and dealt with in two weeks, very grateful to the NHS. Ironically, I have lost body fat in my boobs on this low carb way of life, so I could feel something that has always been there on my mammograms! Pros and cons!
So anyway, the sun is trying to shine and it is definitely warmer, have a good weekend everyone.
 
Felt dreadful last night - and all I did yesterday was walk down the ramp to the car, sit in the car seat while Neil drove, got into the wheelchair to be pushed from the car park to the health centre and sat in the chair while I waited for attention, got my legs bandaged and waited for Neil to come back and pick me up. I did walk backup the ramp, by which time I was shattered (had to struggle against the wind to get into the house). Couldn't do anything else for the rest of the day and was so tired at 7 pm that I had to phone and cancel the Zoom meeting I should have gone to and went to bed instead by 8.30. Of course, that meant I was up again by 11.30 and only had short spells of sleep from then on.

However, I did have breakfast once again of RyVita with melted cheese and ham.

I have managed to roast some peppers, skin them and put them in a jar of olive oil for future use.

2nd meal will be something with some more of the turkey mince. Haven't quite decided what to do with it yet. Thinking along the lines of cauliflower and coconut rice spread over the top and a quick bake (maybe some grated cheese in the mix as well).
 
Up early for a gp appointment. Amazed I got one as all I was asking for was a referral to lipid clinic as months ago, Dr T said I had familial Hypercholesterolemia even though there's no family history of it. His reasoning was that as my parents had died young we didn't know if they would have had heart trouble instead! Duh?
Today was Dr Y who understood and has put me forward but doubts the clinic will see me as I'm only "borderline high LDL". However I'm borderline enough to be put on statins for life, and blood pressure tablets for life (even though I'm always low!!!) but she's holding fire on that as apparently I'm only just over the line at risk 10.2 where 10 is the line
There's a test to see if I have the gene, but can only get that test through the clinic. So, fingers crossed I get accepted.

Finding all this lipids/low carb stuff quite worrying. I feel fine, just worry for my son.

I had a blood test on Thursday for my A1c and it's gone up to 57. The receptionist said it's acceptable! I don't understand it, because I've cut sugary things out and also carbs. Obviously must try harder. :( Happy weekend all.
I'm in the "but I don't understand" club too @RosemaryJackson . Sadly I think there must be some truth in the idea that T2 is progressive, and that we just have to keep working, and working ever harder, just to try to keep on top of it.

However, knowing that complications take years and years to develop , when I'm in my 80s I'm going to relax a little and try to enjoy the life I have left. If that means a slightly higher hba1c, so be it (in my book)
