"What have you eaten" Parallel Chat

Well I was sick in the night, it's been a few years since that happened! I'm surprised because otherwise it's a classic head cold. I feel a bit sorry for myself but will try a bit of porridge and see how it goes.

Hopefully the water meter can be installed quickly today, I'll wear a mask and keep my distance. Lunch will probably be cottage cheese salad, and I'm thinking maybe chicken for tea with some vegetables.
 
Up at 02.50 but fell asleep again after taking painkillers and slept until 8 am. Feeling wobbly so just took some cooked and chilled oats mixed with some yoghurt and a sprinkling of freeze dried raspberry. It was there and easy. Probably not a good idea, but there we go....

2nd meal will be beef sausages, cabbage and onion.
 
I think I must have the flu! I'm really frustrated because it's an absolutely glorious day outside and I could be doing so much but I'm in no fit state to do anything physical today. What a waste of a beautiful day! It's forecast to be nice for quite a few days so maybe I can get going outside in a day or so.

The water meter guy came and assessed, and said I can have a smart meter installed easily, but he's behind on his work today and still has morning jobs to finish. He said they'll get back to me in a couple of days to install it.

I had some porridge for breakfast and I'm not feeling sick but I don't really have any appetite so just had a couple of spoonfuls of cottage cheese with lettuce for lunch. I might need to go and lie down this afternoon and will see how I feel about tea later.
 
Well, the insulin dosing must have been a bit out because I had the first real hypo in ages (2.9, sweating, shaking). Emergency action included a biscuit, a toffee and a can of semi sweet coffee. Finally got it to rise and then, of course, it kept rising to currently 9.9 and still rising! I'm too polite to say what I feel about that! :banghead::banghead::banghead::banghead::banghead:

I'm trying to make a cake of some sort for a lady who will not eat wheat; will actually only eat oats (she's pre-diabetic and the nurse told her to eat oats, which she now does - exclusively). I made some cupcakes yesterday, substituting oat flour for wheat flour - disaster. The plan today was to make a fatless sponge using oat flour but I'm still feeling a bit groggy after the hypo so need to rest for a bit and then I'll see how I go. Can't make the sponge yet anyway. Some of the eggs I need are just out of the fridge and I'll need to get them up to room temperature before trying to whisk them sufficiently. Also can't find my 8" cake tins so am having to use square ones.

EDIT: the cakes are just out of the oven and they look OK. Very pleased with that. I'll make a cream cheese frosting for it. Just hope she enjoys it. I need some more supplies to finish the required number of cupcakes so am hoping Neil can get to town tomorrow for some flour, fruits and eggs.
