"What have you eaten" Parallel Chat

Starting our journey home today.
B: yoghurt, chia seeds and walnuts
Long hilly dog walk in glorious sunshine
L: ham and bacon. Some carby chocolate
Mid afternoon , on the motorway, a nut bar
4 hours driving completed. Expect another 4-5 tomorrow
D: shared chicken wings, followed by a ploughman's salad. Huge! Ate the ham and gherkins and egg amd mayo. Pocketed most of the cheese for tomorrow . A large glass red.

Breakfast: Sardines with RyVita. Not sure those fit in with a CKD diet, but seem fine on a lchf one.

2nd meal: cooking at the moment - sausage casserole with sweet potato, parsnip, carrot and leek. I shan't wait all that long before having it. I am hungry today.

Maybe a cup of coffee will stave off the hunger pangs.

B: scrambled eggs, 3 thick rashers bacon, mushrooms. Mint tea
Hubby had the very full English
I skipped lunch and watched him eat a cheese and chutney sandwich and an almond slice and drink milky coffee. I don't know how he does it!
15: 30 2 hard boiled eggs and water
Home!
D: salad with beefburger (hot) and cheese and a spicy coleslaw we picked up in M&s at the services reduced. Coffee ice Cream

Breakfast: the remains of the sausage casserole (a very small portion) and coffee.

2nd meal yet to be decided because Neil has to go shopping while my legs are being bandaged, so I don't know what he'll bring home.

I'll be making some soup for the next few days - lentil (I have plenty of lentils but no veg to speak of at the moment) and, if I can, a kind of crab chowder - just because I want to experiment with an idea. Obviously it won't be thickened with potato, but it might work with some powdered okra and some cream. Problem - I can't get fresh crab meat here so am experimenting with tinned crab and maybe a few shrimps or prawns (if Neil can get them).

Morning all. I've had 2 soft boiled eggs for bf. I have 97% sausages and fried veg for lunch and a couple of Ryvitas (sesame) with ham and cheese for later. I have an appt for my first eye injection, the day before my birthday! At the moment, I'm just taking a break from painting my bedroom walls Forgot how fit I used to be when decorating. Just finding out how unfit I really am!

It will be good to get the injection out of the way before your birthday so that you can relax and enjoy your birthday.

Just, finally, saved up enough to buy a headstone for my husband. So today I have ordered it. Very simple, straightforward and, to my mind, dignified. Have asked them to leave enough space at the bottom for me to be added on when the time comes. It's a beautiful spot - overlooking the Minch. Just right for an old sailor. Being a keen amateur genealogist, I am a great believer in having headstones to assist future generations, should they care to delve into the family history.

Not long back from town. Neil managed to get most of my shopping list - except raspberries and pomegranate seeds. Something veggie and cheesey suggests itself for 2nd meal today.

Tinned crab is nice - better imo than tinned prawns. We were given a can recently and I expected it to taste of nothing, but it was very pleasant and the texture was firm. (We had ours in "pink sauce", a lower carb version of Marie Rose using tomato purée instead of ketchup)

My daughter has become almost obsessed with genealogy, and while studying in London, has decided to visit all her dead relatives' graves there. (She gets to ride on a tram, another minor obsession!)

She was complaining to me the other day that her great-great grandparents are buried in an unmarked grave in Lincolnshire - I had to explain to her that they were farm labourers and probably couldn't afford a stone.

Back on topic (no, I have no idea where my daughter got her ADHD from, oh look, is that a squirrel?)

Yesterday I had

Italian pork steak (no salad face this time)
20250610_214547.jpg

Meatballs fried with egg, spinach, tinned tomatoes and pine kernels. Could only eat half the plateful!

Tin of mackerel in tomato sauce, divided between two halves of a green pepper. An experiment which will definitely be repeated. Kimchi and the rest of the meatballs.

Today

Last of the pork steaks

then probably mozzarella with tomatoes and/or paté with cucumber, followed by a takeaway to celebrate hubby's passing an exam.

Sounds good. Neil brought home some frozen prawns to go with the tinned crab. I chopped them into small pieces. The tinned crab I have is not very tasty. I was a bit disappointed, but the prawns are fairly tasty. Along with the vegetables they'll make a reasonable chowder. However, "could do better" I think. It's on at the moment and I'll decide if it was a successful experiment in a short while.

Ours was Kingfisher brand (I think they're some kind of Asian as I've also seen them do bamboo shoots). It may just be that you're more used to fresh crab than me and know what you're missing!

Actually, I'm not. Haven't had it in years and had decided never to have it again (just because of what the crab looks like) but way back then, it included the brown meat. I used 2 tins of crab meat - one was Kingfisher and the other was John West. I'm just about to add the fish to the soup and then it will be finished and I can try it.

EDIT: Nah - still disappointing. It's a chowder right enough, but if I hadn't made it, I wouldn't have known it was crab or prawn.

I often find crab disappointing...rarely crabby enough!
And don't get me started on lobster...what is the point? Meaty like a large prawn but no discernable flavour...imho not worth the fancy price

Went to bed late last night, but was cold and hungry so got up at 02:00 to eat a hard boiled egg and heat a hot water (gel) bottle. Both worked and I finally slept.

Have checked weight and bg after being away nearly 3 weeks. Weight hadn't moved (yay!) and fasting bg was 6. I'll take both those :)

10:00 1 hard boiled egg and some cheese
2 hours dancing but sat out a couple as was very tired
Lidl Shopping
Had a mini carb fest following an argument with someone. Let's just say chocolate was heavily involved.

D: Sea bass on Mediterranean veg. Few nuts. 1 large glass red.

Thinking of changing my id to "lonevoice". Where is everyone?

Slept better last night
B: ff greek with walnuts and alpine strawberries straight from the garden.
L: tasty salad using greens leaves from the reduced M&S fancy salad, half a mozzarella ball reduced in Lidl, a slice of ham (reduced from lidl) cucumber, a drizzle of dressing and a strawberry from a free pack from lidl. Chopped mint fresh from the garden. Looked really good, tasted even better and a bargain. Well pleased
Later, another slice of ham with some cheese and a mini icecream (9g carbs).
D: 2 90% sausages, mushrooms. At last minutes stirred in large teaspoon dijon mustard, splash of cream, splash of water. Yum. Hubby had a piece of flatbread with his.
Later a rum on a rock
