"What have you eaten" Parallel Chat

Porridge for breakfast, hot chicken salad for lunch and a curry from the freezer for tea.

Lovely day here today, plenty of sunshine and white clouds. I'm feeling a bit lazy so just going to drink coffee and enjoy it!
 
Feeling much better today, thank you! Not a great deal of energy, and, for some reason, was wakened in the night by very sore hips and long bones - this is not the first time it has happened. They're always fine when I get up next morning, but can keep me awake at night. And I knew the paracetamol had fallen off the dressing-table and hadn't been picked up, for some reason, and didn't want to risk waking my husband by turning the light on, so suffered in silence and eventually went back to sleep again. Haven't risked any exercise; we went to church by car, which we usually do when I'm preaching; at that particular church I often go up to a very big Sainsbury's nearby, but today just went home again. However, we have now booked our Christmas holiday in Vienna - going and coming back by train, sleeper out and breaking the journey in Munich on the way back! We are going on holiday in the motor home next week, but this one should be special.

Meanwhile breakfast was a poached egg on a buttered mini-wrap topped with the end of last night's mixed beans (very much nicer, in my opinion, than regular baked beans), orange juice and coffee; lunch was a mini-wrap with chutney, a cold sausage and a couple of cherry tomatoes - we didn't, for once, have anything afterwards. Supper is going to be ham hock with parsley sauce, new potatoes, carrots and possibly cauliflower or green beans or even both! Followed by Lidl's creme caramel.
 
Having said that, it is, of course, all change - never believe me when I tell you what a given meal is going to be, as odds-on I'll change my mind during cooking! Meal planning simply doesn't work for me, or not in detail anyway! We're still having ham hock with new potatoes and parsley sauce, but we are now having roast vegetables. I opened the fridge door to get out the ham, and the butternut squash was looking at me, so I thought, well, I've got the oven on, might as well. Then I decided to add a tomato to it, just because, and when I was rootling for a tomato, came across the end of a courgette (possibly half a small one from last night?) and a random shallot that had fallen out of its bag. So they got added, with olive oil, herb salt, pepper and some balsamic dribble - er, drizzle, sorry - just because! And I probably ought to do beans in the interests of having something green, but I think the dried parsley in the sauce is going to have to count! And I can steam the potatoes in the microwave, which is quicker.

Yesterday just dry Jacob's crackers, today more of the same but this evening I reheated what was left of the keto orzo, mushrooms and chicken and scrambled an egg into it. Now feeling bloated and yukky again. BG dropped too low this evening so I had a cold choc milk shake and a couple of ginger biscuits (hoping that the ginger would help fend off the nausea - it didn't).

Ah well. Tomorrow's another day.

Oh poor you! Would it help to eat little and often just now? Or does that play hob with your BG? All very difficult. I've had more chocolate than is good for me this evening, which doesn't please me. But it was all dark chocolate, so not as bad as it might have been (I actually prefer it to milk chocolate, and actively dislike most white chocolate!).

I think I'm just getting used to new pills and that's unsettling me a bit. Should sort itself out in a day or so. BG shot up after the milk shake and the biscuits. Currently at 9.3 - comfortable level for me to go to bed for a couple or three hours. Shouldn't drop below 4 while I sleep.
 
@Annb hope things settle soon and you had a better night.
I'm treating myself today to a garden centre visit - I've got a voucher I've been saving up while we sorted the garden, so will have fun spending that.
Easy dinner planned of salad and chicken and breakfast of low carb granola. Will take a low carb picnic with us for lunch as the garden centre has lovely countryside walks nearby and a beautiful village church so will do a short explore.
 
@Annb glad to "see" you - I hope you got some good sleep, and have a much better day today.

The weather is good today so I will try to get some garden jobs done. I hope you have a lovely time at the garden centre @shelley262 - I may nip to one myself after visiting a friend tomorrow morning!

BG only got down to 5.1 by the time I got up - just before 2.30 am.

Strawberries and cream for breakfast. Caro. Seems OK so far.

2nd meal will probably be salmon and salad.

Expecting a visitor this morning. Luckily she doesn't eat snacks so I don't need to provide any biscuits or such like. She'll have coffee (which I am avoiding) and I'll have Caro. I don't really like Caro but it's a change from tea.
 
Evening, all (That dates me!)! Breakfast was overnight oats, as usual during the week when I'm at home, if I remember to make it (if I don't, I'll happily have an egg and toast!). Freshly-squeezed orange juice and coffee. Lunch was a mini-wrap filled with cold ham from last night, cold sausage from Saturday, the heart of a little gem lettuce and a tablespoonful of coleslaw. This, I hasten to add, was divided between the two of us, and he had, as usual, the lion's share. Then we had a little Dubai Pistachio ice-cream with creme fraiche.

I'm not yet sure about supper. I have frozen salmon risotto in the freezer (from Lidl, not home made), but I have also bought the makings of this dish, but I want to make it on the stovetop in a covered pan, as it would be a useful one to make in the motor home and we don't have an oven there. So I want to make it as proof-of-concept. I expect it will make enough to do us twice, which can be Wednesday's meal. On the other hand, I've walked to the Post Office and then on to Sainsbury's (for a change) and then home, which is over 4k steps, quite a lot considering I haven't been very well! I probably won't get much exercise tomorrow, as there is an on-line Ascend Plus meeting in the morning, and then in the afternoon we have a meeting with our financial advisor, at least 90 minutes' drive away, so I don't know whether there'll be time for a walk. Can probably do a tai chi practice at some stage if there isn't, though.

Anyway, whatever I decide about supper, pudding will be a Sainsbury's gooseberry yoghurt (yum!), as we had creme caramel last night and I forgot to put more yogurt on to cook. It's on now, but won't be ready until at least 7:00, and needs to chill in the fridge for a couple of hours before use, so that's best done overnight. If I'd remembered, I'd have put it on last night and it could have been chilling all day.
 
I made a slow cooker chilli con carne so had some of that for tea. Very nice, with cauliflower from my garden and a little bit of resistant starch rice.

I'm going to make more minced beef slow cooker meals now we're heading into autumn. I've got some mung beans that are past their best before date but still fine, so I'm planning a few slow cooker savoury mince with mung beans meals.

Sounds good! We don't eat much meat, but I do sometimes buy mince. And chicken. And when we're in France next week I'll buy liver, because my husband adores it, and it's so hard to get here. Had a thorough look in Sainsbury's today, but none to be had. Only chicken livers, which is not what I wanted. I did make that gnocchi dish on the stovetop, and it was absolutely delicious!

Lovely day yesterday - had a wonderful walk and bought some heart lifting plants including two gorgeous huge colourful pot mums (one bright pink and one yellow) another acer, and also a curry plant to discourage cats from using one of my raised beds as a loo! Let's hope it works.
Busy day today though back to normal responsibilities and I'm racing out soon. Quick breakfast of low carb granola planned, will take picnic lunch of LC ham roll out with me and have taken hm LC lasagne out of freezer to heat up for dinner will serve with salad.

Of course! I'm only leaving the BG level as I'm stopping monitoring my BG. I only really started out of interest, and have run out of strips, and the new machine I bought doesn't work and will have to go back. It seems pretty even, normally within the 5s, so not much point (as I'm not on insulin, I have to self-fund if I want to test).

Meanwhile today I had overnight oats for breakfast. Yesterday's yoghurt hasn't worked very well - the dried cultures are still in date, so I don't know what went wrong. I've strained it, so there isn't much left! I'll probably use the whey with tinned fruit to make ice cream. Going to start getting lunch now - I fancy soup, although it isn't that cold. I have a soup-maker, so just throw in a bunch of frozen vegetables, season it, add water and maybe a stock cube, and let rip! I have a large bowl of chicken stock in the freezer from last winter, so I must get that out soon, but not until after the holiday now. Don't know what supper will be yet - haven't thought that far - but quite probably the frozen salmon risotto, to see what that is like.
