What have you eaten today? (Low carb forum)

B: Nope
L: Nope
S: Cheese and Almonds while cooking
D: Chicken casserole, Parsnip, carrots,shallots,white wine (tested) Puy Lentils, Mushrooms and Brocolli

No naughtiness today have to admit I just added one small square of 85% chocolate .....
 
Breakfast - wheat free cereal with plain full fat yogurt and chia seeds.
Tea - home baked 90sec microwave almond bread
Lunch - mixed green salad with avo and soya sausage.
 
How come everyone else's menus look nicer than mine????? Note to self: must be more imaginative

Anyway - today:

Breakfast: Half a grapefruit
Lunch: Black coffee
Dinner: Mixed mushrooms and goats cheese 3 egg omlette and salad
Supper: Small bag of popcorn
 
B: Home made Yoghurt with 99% choc grated in
L: Smoked Mackeral, salad and an Apple
D: Will be Fish Pie with cellerac instead of potato
S: Down the Pub for a couple of wines

B. Chia seeds in almond milk

L . 3 rashers of grilled bacon 2 slices black pudding ( delicious!)

40 minutes swimming is 30 standard lengths

D. Will be sea bass with parsley sauce and asparagus tips
6 strawberries with Greek yoghurt.

@Chook your omelette sounds scrumptious
 
Bit of an experimental day today and a couple of spikes as a result, so two more foods are not going back on my "Approved" list.

Breakfast: Pret Poached Egg, Sausage and Baked Bean Pot (reading one hour later was 8.5!!!! I blame the baked beans. They tasted very sweet)

Lunch: Thai Green Chicken Curry with pak choi (reading one hour later was 7; I blame the Green Curry as there may well have been sugar in the sauce. I thought I'd risk it as I've eaten many a red curry since diagnosis without any spikes)

Dinner: leftover roast chicken in gravy with a mountain of Savoy Cabbage.

B Usual fry-up of black pudding, egg, cheese, half Lidl toasted roll, mushrooms, matoes
L Home -made shallot, leek & chorizo soup. Why do I always think a whole Vampire chilli in one bowl of soup won't blow my head off?
D Rabbit stew, steamed veg. Rabbits are definitely not just 4-legged chickens. Alien anatomy.

B 2 slices of burgen linseed and soya bread 1 poached egg with a sprinkling of cinnamon
L Garlic mushrooms 2 crackers / cheese
D Liver / onions / sprouts / baby carrots / fresh fruit salad

L: got caught out with work and ended up twiddling my thumbs in a cafe for an hour waiting til I could pick up my mended laptop. So had peppermint tea and a ridiculously small and expensive creme caramel (best of a REALLY bad menu!) Bg hit 7 at 90 mins, then dropped nicely. Very pleased.
S: lc choc brownie with cream - this has less than 0.5mmol/l impact on my bg, so I continue to inhale them daily.
D: chicken and huge portions of green beans and broccoli spears. Stirred cream cheese and 1 tablspoon of Reggae reggae sauce into the greenery. Delicious.

A good day, although I was hoping to avoid Lunch altogether...

Ooohhhhh!!! Choc Brownies... I used to love chocolate brownies - yum - which recipe do you use?? I've googled it but there are loads of recipes, some of which sound a bit odd.
 
Breakfast: Half a red grapefruit and a third of a chipolata sausage (guilt got to me so the dogs got the other two-thirds)

Lunch: Black coffee

Dinner: Cheesey creamy cabbage and ribeye steak

I used almond flour, which she tells you not to do - but it works fine.
And next time I will cook it a little longer than she suggests, but that may be my oven, rather than her recipe...
 
Breakfast at 9am after going for a walk for and hour,2 poached eggs on one oiece of soya and linseed bread

Took my furry friend penny out for a walk at 10am returned home,at 12 midday snacked out one small apple

2pm had lunch yellow fish grilled with small portions of Cauliflower,Broccoli and 2 small tomatoes
 

Thank you for that, Brunneria! I will make them on Christmas Eve as a reward for completing this 800 cals/day blood sugar diet.

S: low carb choc brownie - last one!
D: 'Banting Toad in the Hole', broccoli and green beans. I am not going to post a link with the recipe, because it was AWFUL. Neither Mr B nor I actually ate more than a third of our 'hole' portions. The sausages (Black Farmer) were good, but honestly, that batter was dire. The recipe used a combo of coconut and almond flour, but all we could taste was the coconut. And it was thick and stodgy like a heavy cake. What a waste of good ingredients. And there are leftovers today. O Joy. I think I will probably pick the sausages out and eat them alone!

I would LOVE to find a decent LC batter recipe for Toad in the Hole, but am obviously still searching...
